If you do want to know why he eats like that, it's because it's a metaphor for his carelessness. It's intercut with images of people dying in needless battle, because he's just as sloppy with lives as he is with his food. He's breaking bones and getting red liquid on his hands, it's wonderfully unsubtle

In the book he was actually a competent leader, but stubborn and mistrusting of Gandalf. And there was also a plausible reason he went psycho at the very end, though even without it the reader could probably understand.
