6 medium russet potatoes, peeled and cubed
1 ½ cups shredded cheddar cheese
1 cup cooked and crumbled bacon (or bacon bits)
½ cup green onions, sliced
1 cup sour cream
1 cup heavy cream or milk
2 teaspoons garlic powder
1 teaspoon onion powder
Salt and pepper, to taste
1 tablespoon butter (for greasing the crockpot)
Instructions:
Prepare the crockpot: Grease the crockpot with butter to prevent sticking.
Layer the ingredients: Place a layer of cubed potatoes at the bottom of the crockpot. Sprinkle with a little salt, pepper, garlic powder, and onion powder. Add some shredded cheese, crumbled bacon, and green onions on top of the potatoes. Repeat the layers until all ingredients are used, saving some cheese and bacon for the final topping.
Add the cream: In a bowl, whisk together the sour cream and heavy cream (or milk). Pour this mixture evenly over the layered ingredients in the crockpot.
Cook: Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the potatoes are tender.
Finish with cheese: In the last 15-20 minutes of cooking, sprinkle the remaining cheese and bacon on top. Cover and let it melt.
Serve: Garnish with additional green onions and enjoy!
