The frying oil needs to be replaced. It is very, very burnt and poisonous, and it threatens the health, even though the dish looks very tasty and I am sure of that, but it is urgent to replace the oil

You have a tendency of getting the fish wrong in these videos and just putting "giant" something in the title. How about just calling them for what they are, where some fish species simply are bigger than mackerel or sardines....

Kagami Ulua in Hawaii. Or sometimes called the glass or mirror ulua (crevalle). Scientific name for genus species is Alectis Ciliaris. As someone earlier said African Pompano. Someone called it Alectis Indicus which could also be right because the Carangidae family of fish is large and sometimes very hard to decipher between species unless you have the book whomever authored it and count scutes or gill rakers or etc. Sometimes they have multiple names due to locale and who names them or who names them first. Confused yet? I am at times when reading about jacks.
That looked delicious and quite inventive! Edible art. But that oil looks like what comes from my engine after 3000 miles. Desperately needs to be changed out imho.

We call those trevally here in the states. Same family as the King Mackerel, but much more approachable flavor wise.
