I've been collecting containers to try some of these techniques. Pretty darn amazing. BUT I'm curious, do you sell your surplus at a farmer's market? Also, could you include some recipes? Whomever does the planning and cooking for your family must be as amazing as you!
To prevent all that green moss from growing inside the containers, you need to paint the exterior a dark color so light doesn't get through. I would also put mulch on the top to retain moisture in my area, which is quite dry.

I know this was a while ago but I'm sure it would work with cucumber and possibly the bell pepper too. Bell pepper grows very similar to eggplant and tomato and I've seen tomatoes done this way as well 😁

To make the required angle of the stem and also for training purposes of new shoots
I think it is use to push the stem farther to the pot so that the leaves will have a space to grow...maybe 🤔... I guess...
