When pans would be " almost pure pigment", no media, they would be brushed of the paper after drying (like dry pastel). And paint does not have gum arabic OR honey, those ingredients serve very different purposes. So it seems every bit of information in this short vid is nonsense. Every watercolor both pans and tubes, has a binder either gum arabic or a synthetic alternative. Added to that can be honey, for moisture, and there are other additives like ox gall that help certain pigments spread in the water.
