because amsa USES yoshi as a main and fights his hardest as him. Amsa doesn't choose under-used characters like m2k does for fun. He does it to prove himself and prove to others that the under-dog can still rise through hard work. M2k only used those characters because he thought this guy wouldn't be much of a challenge. I don't doubt M2k works hard (cause he does), but m2k certainly doesn't use low tier characters to win serious matches. If M2k used those characters regularly then it wouldn't be disrespect. Especially doing attacks (pichu's charge attack) that he knows wouldn't work in top level play.
Sometimes the guy does better with characters he doesnt use as much. Example: he lost to Esam as Mewtwo yet won in the next match as Donkey Kong, even though Mewtwo is one of his mains. Perhaps Mew2king likes to experiment with other guys or would like to retain his title as "that guy who can win with anybody". Personally playing as the same 1 or 2 guys constantly gets boring for me so i can relate to Mew2king in that i use everyone. If he throws out a charge attack i cant blame a guy for having fun especially if he can afford to. Not that i dont like Amsa i just dont think Mew2king deserves the crap that gets slung his way

Experimenting in way only used for entertainment in a serious match isn't the proper way to go about the situation. While switching it up is nice (we all do it from time to time), the reason for switching up here is kinda messed since M2k could have just ended the match earlier with his main characters and called it a day. M2k plays on twitch and has plenty of opportunities with his friends or others to mess around with other characters. When majority of the people in tournaments only use 1,2, or 3 guys (such as m2k when he is actually serious), I see no need to pull out another character just for the hell of it on someone you would like to test out. Its like going to a basketball tournament against an NBA superstar and them just making you look bad because they find it enjoyable. They would have made you look bad in the first place by being serious at the start, but the difference is that they make you feel even worse by basically saying you aren't worth the effort instead of "so thats what it feels to be one of the best players. Now I have a feel for it". But yeah I guess you are right on throwing out random moves. It was just in this context that made it bad.
