No, it's a known thing that people's personalities adopt the cultural traits and attitudes of the culture when they switch to speaking another language. It's called code switching and it's really interesting. People act differently in different languages even when they're completely fluent.
It's more that she's aware of Japanese culture and mannerisms rather. When you learn a language through absorption and seeing real people talk and interact you tend to absorb the body language and mannerisms when speaking that language as well. If someone just studies from books and robotic language teaching videos I highly doubt it would have the same effects.
Of course what you guys are saying is partly true, definitely when we switch languages our tone of voice and the way we move our body changed immediately. But I would say it doesn’t affect the core of your personality but just the way you express your idea. And actually I am learning Hindi as a third language in India now, I can relate to her that I’m feeling non-confident in Hindi cuz I can’t express my idea clearly and can’t have discussion of high context, which I can in Japanese and English.

Got friendly with a Japanese businessman who was staying at the same hotel in Manila a couple of years ago,he was fluent in English and during several conversations he told me about a lot of the social attitudes of Japan, still very reserved, conservative,but that is part of the culture and what them so ,in my opinion,very pleasant people and this young woman is a stunner

When she switches to Japanese speaking she folds her hands in front of her and has her hands together for most of the time she’s speaking. Body language says a lot, I don’t know if I’ve seen much hand talking with any Japanese speakers, but I’ll definitely be paying more attention now!
