HOMECOOKED DINNER IN 20 MINS: Sesame Oil Chicken 麻油鸡

- Roland cooked this sesame seed oil chicken or better known as 麻油鸡 in Chinese for dinner last night along with the Super Spicy Chilli Chicken for our friends who came over for a game of mahjong.
This dish is one of my favourite comfort food. Usually Chinese women in confinement will be fed with this because sesame seed oil is heaty - very suitable for them as their body just went through childbirth. Fret not, you can eat this anytime, whether or not you are in confinement :)
As you can see, Roland cooked 'freely'. His ingredient portions were mostly using his own estimation. Hope you can recreate this yummy dish in the comfort of your home.

Sesame Oil Chicken 麻油鸡
INGREDIENTS
700g - 1kg Spring Chicken or Chicken parts of your desire
3 thumb size ginger - smashed
1 thumb size ginger - grated
3 or 4 cloves of garlic - chopped
2 cans of mushrooms
Canned mushroom brine
200ml chicken stock
2 tablespoon sesame seed oil (first round)
1 teaspoon sesame seed oil (finishing touch)
2 capful of Shaoxing huatiao wine
2 tablespoons Rice wine
1 tablespoon Dark soy sauce (or to your desire)
1 tablespoon light soy sauce
1/2 teaspoon of Sugar
2 tablespoons Oyster sauce
Cornstarch solution to thicken broth

Roland, I discovered the best way to get juice from ginger is freezing the ginger, let it thaw, then giving it a good squeeze. Lots of juice comes out.

Hi dear. If you have rice wine, skipping Shaoxing wine should still be ok but I would recommend you to try find Shaoxing wine as a staple ingredient in your kitchen because Chinese cuisine always need Shaoxing huatiao wine for the finishing touch 🤓🤓

What's purpose of using both rice wine and huatiao wine?
Hihi. They both add different flavours to the dish. Imagine one tastes like sake and the other tastes like sherry.

What if u don't have rice wine? What can u substitute it with? Shaoxing Wine? Will that be too much?
How about Mirin? Mirin is a Japanese Sweet Rice Wine. Or Sake? Read Sake is similar to Michiu Rice wine in taste. en.m.wikipedia.org/wiki/Mijiu
Hihi. Yes you can use Shaoxing wine instead. If you can wait, I’m planning to release this recipe again next weekend. In the new recipe, Roland used Chinese cooking wine only.

It’s almost the same with some variation to the ingredients and proportions. Both versions are equally yummy.

Hi, do you use white sesame oil or black sesame oil?
Hi Selena. We used white sesame oil. If you wanna use black sesame oil, you might wanna reduce the amount used as black sesame oil is stronger in flavour. Hope this helps 🙏🙏

Haha. To be honest, this has been practised since our grandma’s time so we just continued the tradition.

The reason is because I believe abalone is canned first then pressure steamed so the sweetness of the abalone is out in the brine. The same should apply to mushrooms - I Guess.

Hihi. You can use mushroom sauce - it’s a vegetarian version of oyster sauce.

Wah can. But that’s a little expensive for cooking. However if you only have that, then no problem 🤓

Are you in Singapore? If yes, you can get it from supermarkets. If not, you can use chicken stock powder instead. Roland has made a remake of this video without using CP chicken stock. You can expect the video to be available next week 🤓

Hi Rachel. Sorry for our late response. In the video, Roland used two types of wine. One is huatiao wine so you can use your Chen nian hua diao. No problem. The other wine is rice wine which was what you said. Yes those are okay. We’re from Singapore too 👍🏻👍🏻
I just wonder if there’s any more Sesame flavour left after the rest of the ingredients mixed in, my mum just simply used Sesame oil to fry, then add in dry fried Sesame seeds blended in powder, the smell n taste of Sesame was so strong n enticing, not like this one, too much mixture here n there
Your mom’s method sounds nice. Ours also has a strong sesame oil taste. You got to try to find out 🤓

Hi Lene. Congratulations on your pregnancy. It’s best to consult your doctor. Based on my brief research, it’s best to avoid sesame seed and sesame oil during pregnancy as it may induce preterm labour. Actually when you’re in confinement, you will probably eat this until you get sick of it. Hehehe like almost everyday for one whole month.
