    about the three week mark is the way i like em, its like a jelly almost. about 6 weeks they get like sugar dates which is still very good. this works great for sweet and astringent persimmons.

      Hi King Crimson, yes if you notice in the video the persimmons are drying when they have that beautiful deep color. They must be the Fuyu type persimmon like in the video still be firm and crunchy to eat Not over Ripe.

    My next door neighbor is from Japan. Her grandmother grew Siago persimmons. Which are admittedly somewhat softer than Fuyus. But she said we could never dry them outdoors in our humid climate near Houston. Also, we live in a bird migratory zone that cause great damage to my Fuyus. Do you have bird damage Lai?

      I actually did just that with my alleged Hirotanenashis....which aren’t much astringent in a fresh form and also looking more like sweet Sajo’s or maybe Fuyu O Gosho’s but anyway ….
      let them hang until they were fully ripen( or max redish-living in a cold dark land) and they already showed first signs of rot at the base - had to quick dry them and result is delicious ! definetely a sugary improved taste !

    • @gladstanegonder4970
      @gladstanegonder4970 5 лет назад

      oh and the advice :
      peel off skin as thin as possible (layer direct under the skin is the sweetest) and then slice them and put em in your dehydrator = done ! maybe remove when there is still some moisture in them, so that they can build up more flavour while curing ...but sugar content must be already high enough then, to prevent rot !
