    Chef, I like the chemistry part you explain/teach us the home cooks. I appreciate that a lot. We don’t know why we have to do certain things in a certain way when it comes to cooking so sometimes don’t follow properly but after watching and listening your explanations it becomes easier to do things right way

    It calls 'IDADA' in Gujarati. Naylon dhokla nahi naylon khaman kehte hai Gujarati me.

      And another thing, isme red chilly sprinkel karne ke bajaay agar coarsly crushed black pepper agar dalte hai steam karte time to uska ek authentic flavour aata hai jo gujarati me communicate karega 😂

    Dhokla and khaman are different recipes. There are 2 types of khaman 1st is nylon khaman and 2nd is vatidal na khaman. I like vatidal na khaman. Can u make it?

    So excited to try this favorite childhood dish of mine! We always had them with red chili or black pepper powder sprinkled on them - before steaming though. And then eat dipping in raw oil - no tadka. Delicious!
    One mom tip - flip the steamer tray upside down after getting it out of the steamer - that will help prevent water droplets from sitting on top at the cool.

    If you add black pepper on the top of dhokla when you put it to bake...belive me chef the taste was amazing.

    It tastes even better the next day when you pan fry it slightly. With a nice crispy texture outside and soft inside. Eat that with coconut chutney 😍😍

    Isn't the fermented batter same as idly/dosa batter?

      The difference is basically dahi which was added in the batter. Other ingredients are the same.

      Yes I make dosa batter with same ratio. But slightly more urad dal is even better than half portion

    It’s basically idli batter with dahi and sugar. That’s amazing because I read in food history that idli came to tamilnadu from the Saurashtra people that migrated here during Shivaji’s time. This prooves it. Thank you.

    It is called IDRA in my city surat. Also black peper is the most common topping for the IDRA in surat.
