  • I was excited to receive some custom Carbon Steel Cooking Grates that I’d ordered, but before I could put them to use I needed to clean and season them. In this video I show you how I did just that.

    When you said you did the math for the air flows, I smiled knowing that your engineering background was better than the average bear. Nice one Ry!

      I'm curious about "the math". The air flow is across the top from the left to the opening on the chimney in the back. That part of the airflow has nothing to do with the size of the grate openings. The firebox of the Camp Chef that Ry has is in the center and there are small slots in the drip plate that is between the firebox and the grill. But he (and many people) cover that with aluminum foil. So that airflow is already blocked. On my Yoder, there are no slots in the drip plate. I'm sure that's the case for many pellet smokers. My point is that from my point of view, airflow between the drip plate to the main chamber through the grates should not be a factor at all.

    Some real time feedback... I filled out the form on The Burn Shop web site and within 30 minutes I got a call and had a delightful conversation about cooking grates and how I would use them in my smoker. If nothing else, I want to buy from this company because of that personal touch.

    I just reached out to The Burn Shop to get a price for my Yoder YS640s. I told them "Ry sent me." My wife is gonna kill me... "But Honey, I just HAD to get these. Dinner is going to be so much better..." She won't even have to season the cast iron pan she's going to run after me with...

    Ry I enjoy watching your YT channel. I Find seasoning grates the easy part, it's keeping the seasoning on that's the hard part. My grates stay on the grill all the time. If I don't get everything off the grates after a cook especially salt .The condensation forms on the salt and eats the seasoning away and I get rust.

      I bet that can depend on climate in your area. I'm fortunate that it's pretty dry here. But I still oil my grates after every use.

    Great tutorial. Mad respect for dropping this vid. It's amazing what seasoning iron and steel will do. It's not hard, but makes ALL the difference on grills and smokers alike.

    I just got my grates... I have a Yoder YS640s. It comes with two types of grates. The lower grates are typical grates made from chrome-steel wire (best word I can think of). They are really hard to keep clean at the intersection of the vertical and horizontal wires. The top grate is called "expanded metal". I guess somehow a steel plate is scored and then stretched to form kind of a screen with diamond-shaped holes. It is really hard to keep clean. I clean my grill every week or two so this take a lot of time. I'm not content with scraping off the gunk with a grill brush. I think the new grates will be much easier to clean.
    The Burn Shop grates look amazing. They are thicker than I expected. I'm eager to do the first seasoning and put them to the test. Good thing you did this video because no seasoning instructions were included. I had them create three pieces for the lower grates. One was half-length (you have two have-lengths) and two quarter-length grates. I also had them make a grate for the upper rack.
    I did two quarter-length grates because the Yoder has a "trap door" that you can remove from the grease shield to expose the fire box on the left side. There are times that I want to remove the grates over the left side mid-cook, remove the trap door, put in GrillGrates, then crank up the heat for reverse searing. I didn't want to have to man-handle a half-size grate while it was hot. Two quarter-size grates will be easier to handle.
    Neither you nor The Burn Shop has provided a solution for lifting the grates, hot or cold. I bought a grill lifter from Amazon that I hope will fit in the grate opening. If it doesn't, I'll grind it until it fits.

    Interested to see how you go with the slots going left-to-right rather than front-to-back... Normally you are pushing and pulling your cooking implement front-to-back, I reckon cooking implements will hang up on them - I could be wrong though... They look _grate_ :D

    RY.really happy you did this video,as I'm dumping my 3+ yrs Traeger Texas Elite and ordered the Campchef SG24 WiFi a/c The Traeger nevcer gave me a smoky flavor until I switched off to Lumberjack Pellets and Viola smoke flavor!My frill is the same as yours minus the SS Hood and your controller is color .For searing (direct cooking)I plan to use Grill Grates on top of the OEM grates since I already own them,but seeing you CC grill,by the looks of it u have used it alot(just haven't video'd the cooks)

    Ry, have you considered doing a back yard/ cooker tour? Seems to be a trend some of the other BBQ guys on YT have done in the past, and I think it would make for a good video!

    I have a Yoder smoker with the standard cooking grates. I clean my grill every week and I get really frustrated that I can’t clean in all the little corners where the bars cross and are welded. I’m really intrigued by this. I didn’t know such things existed. BUT... Ry, I’m very eager to know how they cook! So post another video soon! BTW, I used to have a Camp Chef and was discouraged by the rust on the drip plate. So I started seasoning it with avocado oil and got rid of the rust. I switched to Yoder and started doing this from Day 1 on the drip plate. I do use aluminum foil all the time, but I like not having to see a bunch of rust when I change the foil.

    I’m surprised they recommended only 350F as that is below the smoke point of polymerization for canola oil. When I season my cast iron I always take it to 25 degrees past the smoke point of whatever oil I’m seasoning with for an hour to make sure it adheres to my pans.

    Have you heard of Crisbee? It’s a stick that has the oils needed for seasoning cast iron and carbon steel. I love the stuff. No fuss no muss.

      I keep several stacked on wood pieces in the garage with a light coat of oil on them.

      It’s easier to find custom carbon steel than cast iron. Perform very similarly 😊

      Well this one was brand new :) I just brush them down after each use and occasionally spray with some canola oil.

    I was thinking about either a burn shop carbon Weber grate or a cast iron Mallory. I know you have both, so which do you like better?

    Thanks Ry. What was the ordering process like as far as giving them the dimensions and lead time for custom parts? Also, why always a NASA hat? I'm a huge space fan so I always noticed it.

      I'm just a space nut :) I went through their custom order form, gave them the dimensions, they sent a preliminary design, I asked for one minor change, and then they made it. I think it was about 2 weeks total from order to delivery. This was a pretty straightforward design, though, with no logos added, so something more complicated might take longer.

Have you been following all the privatized launches that has been happening the last few years like SpaceX and SLS and the few other smaller companies? I'm ready for that Delta IV Heavy launch tomorrow (9.26.20). Anyway that is a very reasonable amount of time to get those grates delivered I think i'll have to look into that.
