How can this be a reduction if the lid is kept on... the whole process of reduction is by water evaporation. Good idea tho, and I'm sure a sweet balsamic vinegar would pair well with alot of dishes. Cheers!

Use it on roasted Brussels sprouts and\or roasted broccoli. Drizzle the warm glaze on the roasted veggies before serving. Wow!

The Redi Temp valve in the lid allows the moisture to escape and the balsamic to reduce down. Thanks for asking.
