Julie Robinson omg I found the most amazing trick to easy hard boiled eggs. I have always broke then when peeling... The trick is to STEAM THEM!! Not boil! Put a lid on and steam a dozen for like 16 minutes. Take out. Put in cold water. Roll. And the shells literally fall off... it’s amazing!!

I like to bring the beet juice and the sugar and spices to a boil. I find the flavors mix better. I’d also add some whole cloves peppercorns and a couple bay leaves. Then slice up a Vidalia and put it in the jar with the eggs and the juice and beets.
if anyone asks for a midwestern snack, like, a traditional midwestern snack, make em a batch of pickled eggs in a mason jar. very good stuff. my gma leaves out the cinnamon but other than that, a very traditional easter appetizer

I skipped the onion this time on 30 eggs (a flat) but I put in a jar of hot cherry peppers with the brine. two cans of sliced beats, 2 cups of white vinegar, a half cup of apple cider vinegar, 2 cups of water, a cup of sugar, two tbl. sp. salt. It's tangy for sure but in three days the eggs won't be that strong.
