Wrt the floor plan representation of stairs: There is a problem that has been bothering me ever since the release of the stair tool and I still don't see a good solution to it. By default, the stair symbol shows the lines of the last thread and the arrow points to the last line of the thread. This is does not comply with graphical standards that I am aware of and it is misleading. (it shows as if the stair had 1 extra riser) The symbol can be fixed, but it is very cumbersome and time consuming to turn off lines one by one, especially in a complex project with loads of stairs. As a minimum, there should be a tick box option to not show the last thread lines on plan, same as the tick box to stop the arrow at last riser.
Maybe we can talk offline (so I can understand better), but you've looked at custom GDL for the Stair components? For example, for me it's a bit annoying that for the Walking Line, you can't turn off the circle at the start...if I get time one day I might try to look at that.

That seems quite detailed for the main model. You can add a profiled Tread for example, and add 2 layers, or can script a new Tread/Riser object.
