The first and main reason is to balance out the flavours. Wine brings with it a touch of acidity, which will cut through and mellow out the heavy, rich flavours of the sauce (namely the cream). It's not a huge amount, but it adds a really nice gentle background flavour. The second reason is to deglaze the pan. After you've fried of the chicken/onions you might find a touch of char stuck to the pan - this is flavour we want to use up. When you pour in the wine you can use your wooden spoon to scrape off this flavour and incorporate it into the sauce. But if you can't use wine, you can just substitute with more stock, or even some of the starchy pasta water. Don't sub other acidities like wine vinegar or lemon juice, even once reduced down they will be far too acidic for the sauce. Hope this helps :)
@Noor Hussain He's already given the alternative for those who can't use wine: "But if you can't use wine, you can just substitute with more stock, or even some of the starchy pasta water. Don't sub other acidities like wine vinegar or lemon juice, even once reduced down they will be far too acidic for the sauce" He's even added that lemon juice shouldn't be added, so your suggestion to do so was probably wrong.
Love how this video was straight to the point simple and short. I enjoy these type of videos instead of overly exaggerated, talking nonstop kind of videos 😂 I hope your channel blows up soon ❤️
Me too!!! I like these types of cooking videos and I hate those long ones where the vlogger talks and talks a lot, like get on with the recipe already!
I made this without the wine! I added in 1 full fresh chopped chilli, and one fresh grated tomato to the ingredients. ... was the best spicy chicken pasta I’ve ever had 🤤
3/4 years ago in the middle of Covid my girlfriend and I would learn how to cook together via Skype, and this was one of the first recipes we ever tried. Today I'm cooking this in our apartment as a surprise to her
I made this recipe with the following substitutions: didn’t use any sun dried tomatoes and used tomato sauce instead of tomato purée. I reduced the tomato sauce until it was very thick to remove the water. Even with those substitutions, this recipe was DELICIOUS! Hoping the next time I make this, I can use the correct ingredients. I bet it will taste even better! Thank you for this awesome recipe!!
just made this pasta! i use fettuccine noodles and double the sauce recipe but used 500g noodles and 5 chicken filets it was PERFECT! i also added some baby spinach the entire family loved it !! if you are more tolerant of spices definitely add more than it says or add some hot sauce bc this is definitely not nearly spicy enough for a brown household 😂 we topped ours with a few drops of tabasco at the table xx
You like spicy food, but you used Tabasco? That barely has any heat at all. Use some habanero sauce or something similar at the point when you put the tomato puree in, triple the red pepper flakes and cayenne pepper. Add a little white pepper too. Then you've got actual heat
Just came across this recipe and let me just tell you all WOW!!! This has to be by far the best pasta recipe I have ever done. When I made it the first time it was completely gone. Now I have to double it or triple the recipe to make sure my whole family can get some. Yummy don’t think twice just make it!!!
This is the first pasta I’ve made from scratch a year ago and it is still my go to recipe. What a wonderful video and a simple yet lovely dish. Thanks for giving me a recipe to show off to my parents
This might be the best pasta I’ve ever cooked. I didn’t have sun dried tomato so I substituted it with canned whole peeled plum tomatoes. I doubled on spices and added some garlic powder and Italian seasonings. Breathtaking! Will definitely cook it again. Thank you!!!
Made this today. Substituted sun-dried tomatoes with some more tomato paste. And white wine with red. And stock with water. BEST DISH I EVER MADE! My mom said it was restaurant level. Thanks for sharing! For those of you wondering if you should make this or something else, YOU WON'T REGRET THIS xD
It was really delicious, didn’t have any chicken breast left so had to leave it out. Very similar to penne a la vodka but spicier and creamier in my opinion
Wow I made this last night and it was the best, literally tasted like I had imagined it. Had major doubts about adding parsley to garnish but tried and wow, thank u so much. I doubled up on the measurements and wish I had tripled up.
I just saw this video and I was like... Bruuuuuuuuuhhhhhhh. Yes. A short video that actually gives proper instructions. I had to sub. My fiancé is gonna flippen love this when I make it for him ❤️
I'm glad I found this in my recommendation. I have never had boring pasta meal ever since I made this one. So delicious and for stress relief especially during summer nights
I’m thirteen but I figured out to make this (That’s how easy it was)!! I made double portion for my whole family and we all LOVED it!! Big success and I have now subscribed and liked👍
I like mine super spicy, so i added more Cayenne as well as "Famous Daves devils spit seasoning". It came out BOMB. Also, I didnt have chicken broth so I just threw up chicken bouillon in water
I made this today and instead of white wine I added a little red wine and it turned out excellent. It was my first time cooking this recipe but the family really enjoyed it
I made this. It was good. I spiced it up more than the recipe called for, but it was tasty. The mixture of tomato, cream and wine was kinda the best of all worlds
Mine got too hot so i made my favorite barbecue instead: - 1 dl of your favorite oil - 1/2 dl ketchup - here Heinz is of course preferable :) - 2 large tablespoons. brown sugar - honey el. syrup can do that too - 2 tbsp. soya - 1-2 tbsp. apple cider vinegar - other vinegar can of course also be used - try. forward - 1 clove crushed garlic - Slightly dried chili - Possibly. a few "splashes" of tabasco
Just got done cooking this literally. I only had diced tomatoes not sun dried and I substituted white wine with extra chicken stock . Really gooodddd with a side of bread sticks and wine 😋😋😋😋
I made this today and this is the first time I follow a recipe and it actually taste good. I will be making this again in the future ! Thank you so much
Can someone help me out; What does the white wine adds to the dish and is it necessary to add?

Noor Hussain yeah im pretty sure she’s a muslim cuz that’s a muslim name
On the blog post it says that you can substitute extra chicken stock for the wine.
U add apple vinigr ...... but less quantity.

That’s awesome! Glad it went down well 😁
Try making it with boneless skinless chicken thighs instead of chicken breast, you will love it even more 🤓
How many people did you feed and how much pasta did you use?
Orion Beci a box of pasta is good for 4 people. All depends on if the people you’re making it for are pasta fanatics lol

Glad it turned out well! Nice tip with the tomatoes 😁

Its looks delicious😍. Hope I can find all the ingredients🙈
Hope so too! 😁
Hands down one of the best recipes
I cooked this and my family loved it!
Is there anything that can replace the sun dry tomatoes? Because it's quite difficult to find...
Cherry Tomatoes, it just won't be as pungent
I made this. It was good. I spiced it up more than the recipe called for, but it was tasty. The mixture of tomato, cream and wine was kinda the best of all worlds
Would call that tingly chicken pasta due to my severly chili abused tongue
This is my son’s favorite pasta dish! ❤
The paprika powder burns at the beginning. You added it too early. The "crust" on the chicken is actualy burned spices ...
I just made this pasta for my family today and it was a complete hit. Thank you for the fantastic recipe.
Indians be like, "Alright ! Where's the Spice"😂lol
nah not really
MshAllah So much Delicious recipe ❤❤❤
I’ll try to make this ❤❤
No offense but at first I thought this was Howtobasic
It's not unexpected! HowToBasic always makes the videos very smooth like this one at first, but then BOOM!
I didn’t find any sun dried tomatoes so I added paprika instead it turned out real good.
Thanks for the recipe!!!
