INGREDIENTS: Makes 16-18
BASE:
200g Crushed Graham Crackers
80g Melted Unsalted Butter
CHOCOLATE FILLING:
3 Teaspoons Gelatine Power
3 Tablespoons Boiling Water
250g Cream Cheese
3/4 Cup Caster Sugar
1 Cup Melted NESTLÉ Calypso Kibble (Dark Compound Chocolate) - OR a Dark Chocolate you enjoy eating
600mL Whipping Cream
2 Teaspoons Vanilla Extract
TRUFFLE TOPPING:
300g NESTLÉ Calypso Kibble (Dark Compound Chocolate) - OR a Dark Chocolate you enjoy eating
150g Whipping Cream
NB: Drizzle with melted chocolate or truffle mixture

Love love LOVE when you make mini cheesecakes. They look so pretty and tasty. One question tho, do you think they hold up well at room temperature?
Thank you! Yes, they do hold up because of the gelatine but hey cannot be kept out of the fridge for too long. I've had them out for upto 1 hour with no problem. I don't like to keep them out longer because of food safety issues.
Wow, i always thought people used ring moulds for these mini cheesecakes which i don't have. But i have this mould, i use it for muffins.... i never knew i could use it for this purpose. I hope it stays out for a bit without melting
Sandra Ochai a lot of people do use ring moulds but I think they release better from the silicone. They won’t melt if it’s a cool day and you use gelatine. Try not to keep them out for more than an hour due to food safety. Also, I think they taste nicer when they are cold ;-)

Yes. They can be made a month in advance and taken out of the freezer the night before or day of the event.

If you bring it to room temp it should solve the problem. Alos, whip really really well.

@@jenniferkonieczki337 you have over mixed causing it to curdle.
The key is to know when to stop beating :) if you overdo it, the fat in the cheese curdles.
Three tips:
1. Ensure all your ingredients are at room temperature.
2. Mix until just incorporate. Don't overdo it.
3. If it does curdle, gently heat the mixture to just above room temperature while mixing gently and then allow to cool again.
How long do these last in room temp after frozen?

Imperial Guard it can sit at room temp for about an hour. Best served chilled. Be careful leaving it out on a warm day due to food safety concerns.

In same recipe u can use agar agar or China grass instead of gelatine....
Devu's gourmet getting the proportions right is really difficult so that you don’t completely ruin the texture - it’s something that I struggle with

+Mafe Labastida I would think that it would be a matter of personal choice as to how cold and solid you like your cheesecake to be. I prefer mine very cold and solid so I eat mine right out of the freezer but if you prefer yours to be a bit more soft in texture and not so cold in temperature then let it sit out at room temperature for 10 to 20 minutes before eating. I personally wouldn't leave it out more than half an hour at room temperature though as any longer could put it in the danger zone. But that is just my honest opinion.
