In my country, Bear, we don't usually or never even cook bitter gourd with eggs like you do. Hmmm, this is new for me. Usually I process bitter gourd by sautéing it with lots of chili so that the bitter taste is faint, or sometimes we use it as an addition to the dumplings. But these days, many people are slicing bitter melon very thinly, coating it with rice flour and frying it until it's crispy! But anyway, lots of thank for a new knowledge--
