  • How can anyone resist an absolutely melt in your mouth potatoes steeped in a rich gravy with the delicate fragrance of freshly prepared garam masala?
    Ingredients
    10-12 small to medium size potatoes
    2 bay leaves
    2 cloves
    2 cinnamon stick
    1 black cardamom
    1/2 tsp cumin seeds
    6-8 Kashmiri red chillies , soaked and ground to a fine paste
    2/4 tsp coriander powder
    1/2 tsp fennel powder
    1/2 tsp ginger powder
    1/2 tsp cumin powder
    1/2 turmeric powder
    1/4 cup chopped cilantro
    1 tsp kasuri methi ( optional)
    10-12 cashew-nuts , soaked and ground to paste (optional but recommended for a rich gravy )
    Oil as needed
    Salt as per taste
    1 tsp garam masala*
    *For garam masala
    Ingredients
    1/2 tsp black pepper
    1/2 tsp fennel seeds
    1 tsp cumin seeds
    1" cinnamon stick
    5-6 cardamom
    6-8 cloves
    How to make garam masala
    Dry roast all ingredients till fragrant.
    Grind all ingredients at high speed for to a powder.
    Method
    Pressure cook the potatoes with 1-2 cups water, 1/2 tsp turmeric powder and salt for 1-2 whistle. Peel off skin and prick the potatoes across with a toothpick or fork.
    Heat oil in a deep vessel and shallow fry the boiled potatoes till they turn golden brown.You may also deep fry the potatoes. In same pan, take five tbsp oil from the already hot oil you have from the fried potatoes. Add cumin seeds, bay leaves, cloves, cinnamon sticks and black cardamom and saute for few seconds on low to med heat.
    Add Kashmiri red chilli paste and remaining powdered spices and , sprinkle some water ( if necessary to prevent the masalas from burning) and keep on stirring until oil separates.
    Add cashew nut paste and continue stirring . Cook for about 5-6
    Next, add fried potatoes and cilantro/crushed kasuri methi to the gravy . Cover with a tight fitting lid and boil on low flame for 15 minutes. Kashmiri Dum aloo is ready
    Serve hot with pulao or naan.
