Ken, i hate to put on so many posts, but also, i cut appx. 3/4 inch deep slits all over the chix flesh & insert a 1/2 clove of garlic before seasoning/grilling & the rest of the recipe is same as yours, if you like garlic it gives it a great flavor.

When i throw my chix on the grill, i wrap a brick in heavy duty aluminum foil & place it on the chix, works great & is just a hillbilly thing, lol.

I’m looking for a heat deflector for my Smokey Joe. We like to use it on the beach in the summer to grill. Would love to try that spatchcocked chicken. Think a 12” clay pot base wrapped in foil would work?
Ken my good friend, it is hard to see on my small i-pad, but it looks like the gizzard of the chicken. They are edible & we eat them. It is like a 2nd stomach , but more like a grinder to break down hard kernels of corn that they eat & they are tasty if cooked right. Marinate 24 hours in buttermilk, bread/batter & cook them in a pressure cooker. The best recipe i've seen, google "gizzard city restaurant" in Michigan, their's look the best.
Hey Ken. I was thinking you might want to try a TipTopTemp controller for that Smokey Joe. If you don’t have one, reach out to Bruce and I’m sure he’ll take care of you. They work great and only $37. Won’t be able to thread your probes in the way you do though.
Is the Smokey Joe good for grilling. I would like to get a set up like this. Would a 3 inch high basket be good with a pizza pan as a deflector. Could you do this without a basket. Thanks so much
Hey ES! I like the Joe for grilling a few items, it doesn't waste a lot of fuel. The basket isn't necessary but it does make it nice for changing out the charcoal. A pizza pan is perfectly fine to use. 👍 Did You see my Vid where I use the bottom of the Joe and make it the Top of my Tamale pot smoker? I use one of those ceramic dishes from a planter pot. It works great as a deflector and I wrap it in foil for easy clean up. 👍😁 Metal On!!! \🔥/

Great cook, you should put a long piece of dowel for a handle on the damper, just screw in the piece you hook, very handy
