So, ummm, a better way to do this might be to drain all the fluid out of the pan via the drain pan bolt, then fill that much back in. This way the fluid in the pan if new fluid, the pump will pick up the new fluid and push out the oil via the line you took off. You would drain into something you can measure, push out 3 Qts, fill 3 new via dipstick, repeat until new fluid comes out the hose.
His method achieves the exact same thing with only 2 trips under the car. The fluid coming from the hose is being pulled out of the pan. So once the pan is empty it stops flowing and he shuts it off. Fills pan up and repeats. All from above the car until it’s done.
