The Mangodas seem quite similar to Ambodes (Aam-bow-day) from Karnataka. They sound kinda similar too. They might be related. And somehow distantly related to Falafel.

The street food reminds me of a Singaporean friend of mine, she goes to Singapore about twice a year, not for her mother's cooking as she says but the street food, she thinks it is the best. I believe her & I am sure this food too is the best of India.

How do you dry the coriander leaves? I live in Australia and coriander can cost over $30 in summer
she dries it in the sun but you can do it in the microwave too and then just blitz in a blender
It is super easy to grow coriander, even in a pot in the house. I do this every year with much success

I am in US was brought up in Delhi we used to get round very good baingan for bhartha , I have never seen them in US ……egg plant is originally from India , so we see loot of variety size , color green ones in south and taste also differ . I n Us everything taste same all GMO , hybrid …now parents are in Kerala I think there the state gets everything from Tamil Nandi it’s hybrid and seems like American .But people are becoming conscious starting organic saving traditional seeds .The baingan I saw in your market looks like American not desi round one its disheartening to see . people should insist on desi seed variety.
You are right ,all the food got contaminated in so-called developing countries.
Ppl are happy to buy ultra processed foods .it's so sad that they have lands and nice weather to grow organic fruits and veg, but they are duped into otherwise.

LOL, y'all think all these bhujiyas and chikkis are NOT processed food? Sugar literally originates in India. And how do you suppose you get so many varieties of brinjal without selective breeding and cross-breeding aka hybridisation? GMO is new, yes, but nothing automatically bad about it.
I get wanting to preserve heritage varieties and that we should. monoculture is bad science. and bad from the market perspective. but at the same time, the way to save them is to pay farmers more. When Indians are willing and ABLE to afford more we can stop looking at 'the most food at the cheapest price' and only then it makes economic sense to focus on heritage/heirloom distinctions.
People don't insist on desi variety for similar reasons to why you are in US and not Delhi - there's things that are more attractive (and that includes lucrative)
