You can absolutely do that. However, using Union Hangar to search for Y, equipping Union Driver and the banishing it to equip Z is just better since it can free up some extra deck slots. The intermediate fusions of XYZ are kinda useless, especially since none can target face up monsters, with XZ being the better one since it can target face down Spells/Traps. That's of course unless you Book of Moon the opponent's entire field and then use YZ, which is a one card summon as long as you start with Union Hangar or Terraforming (Or even Planet Pathfinder)

The only way to turbo out XYZ in one turn without Ojamas would be to start with Terraforming/Union Hangar and Unexpected Dai/Fusion Deployment. Even then, you can basically only summon XYZ (If that's your goal) which is completely worthless in your opponent's turn on its own unless you can somehow protect it or run Hyper Cannon with plenty of cards in your hand to discard. Now, if Dimension Fusion wasn't banned, you could argue to pair XYZ with a Dimensional Fissure to go into Link monsters and then resummon the now banished pieces with Dimension Fusion to banish them for XYZ. (Although, that would still be a 4 card combo which would require the stars to align really well)
