  • The King’s Coronation is tomorrow 🇬🇧 and this lemon posset pudding is inspired by one of the King’s favorite dessert; lemon cream. This pudding is super light and perfectly citrus. It sings citrus with every bite and embodies everything we love about lemons.

    What are the ingredients?

      Recipe posted below, hope you try it out! 🥰
      ▢ 16 oz (1 packet) silken tofu
▢ 4 Tbsp fresh lemon juice
      ▢ 1 Tbsp lemon zest 
▢ 3/4 cup powdered sugar
      1. Carefully press out water from tofu. I personally did this by covering with a paper towel and using a couple books to squeeze out the extra water. Do this for about 15-20 mins. 

      2. Add pressed tofu, lemon juice + zest, and powdered sugar to a blender or food processor. Blend until smooth. 

      3. Add to serving glasses. Wrap and refrigerate overnight or at least 8 hrs. 

      4. Serve with your favorite toppings. I opted for a few fresh raspberries and some lemon zest.

      @TheCurledBanana321 tofu itself is actually really bland in flavor (depending on whatever ingredients you use to flavor it) so it’s often used in both savory and sweet dishes! In this recipe, it’s main purpose is to give that silky, smooth consistency 🙌🏽
