    Many of us pellet cookers have traditionally done fat cap down. The thinking is that the heat, unlike an offset, is coming from the below, usually a centered burn pot and the fat protects the meat. Since I heard Aaron Franklin talk about sugar cookie crust, I’ve changed to fat side up, it’s the only way to achieve that.

      Great point and I agree 100% I initially started cooking fat side up before I really dialed in my brisket cooks and once I wake to meat side up I never looked neckneck... bt tasting this one right here got me rethinking some thangs! I might have to run that one back!😉

    Love the vid! Thanks for this. Have you tried foil boating instead of a full wrap? Leave that fat exposed to continue rendering throughout the 2nd half of the cook and rest period. I LOVE it.

    Imma fat side down guy, Joe! Although I have made them fat up. Either way, I just love brisket! And yours looked mighty tasty!😋😋😋

    225 or 250? does it matter?

      I like 250 bt you can do either.. 225 just takes forever for things like brisket to cook and uses more fuel. I haven't found it more beneficial to cook at the lower temp so I stopped
