Sorry that I somehow missed your comment as it was in a reply of someone else's comment. My recipe is a homemade recipe. I haven't tried any bulk waffle mix or crepe mix so I won't be able to tell you the difference. Sorry about that. But I can tell you, the consistency of my recipe is in between a waffle batter and crepe batter. Thinner than waffle batter, but slightly thicker than crepe batter. Hope that helps.
Hi Amy, could this recipe be used to make the “other” HK waffle which is served with condensed milk and peanut butter? I miss its soft on inside and crunchy on outside texture :)
Hi Amy. I tried using this recipe but only one side is covered with batter and the other side not despite turning like how it's supposed to be. Is it because the batter too thick? Or it get cooked too fast on one side? Also is it ok to skip evaporated milk?
Thank you so much for your feedback. The amount of batter used should be able to cover both sides of the pan. But keep in mind, if the pan you used is different than mine, that could be why it wasn't enough batter to cover. Also, after adding batter, I immediately close the pan and flip it upside down to let the batter cover the other side of the pan before it's all cooked. Regarding the evaporated milk, it's what give these waffle bubbles the unique flavor. So, I don't recommend skipping it, unless you have dietary allergies, etc. Hope this helps.
Hi Amy Thank you for your video. I just came back from Hong Kong (first visit) and I tested the egg puff (it was delicious). I will try you recipe but can you put also the one with banana and chocolate please Thanks again.

You're welcome. Yeah, I guess if they are selling these to make money, I could understand why they don't want to share their recipe. You can experiment a batch and see how it turns out. Since I haven't tried the savory version, I can only guess/imagine the taste. The best is to get hands on and make a batch to test it out. :D That's how I create most of my recipes. ;)
I have a recipe that I always make as I don't like sweet stuff. I would like to share it with anyone who is interested. -- 150 gm flour, 30 gm rice four, 1 ½ teasp Baking Powder, ½ teasp Baking soda, ¼ teasp salt, 2 Tbsp sugar, oil, 250 ml milk, 2 eggs - separated Filling :- Sausages, onion - all diced. frozen mixed veggie. Fry, season it and cool them. Cheese also diced but don’t fry -- optional Beat egg white with pinch of salt until peak. Beat all the ingredients in another bowl until smooth Then fold in 1/3 of the beaten egg white with the hand egg beater is the best way and then the rest of egg yolk batter. Add in the fried sausages mixture. Nate : -- You can make the waffle like pancake. Or cook in your bread toaster sandwich pan if you don't have a Waffle maker.
My Dad got me the pan in Hong Hong. They also sell one similar online here: goo.gl/N3Xr7c My friend tried the electric one and she it it works well too. goo.gl/XTTw3w I hope they ship to where you live! Happy cooking!
I set my stove to medium heat (see video at 2:08). Sorry the white caption isn't the easiest to read over the silver stove. Please let me know if you have other questions. Happy cooking! 💗
Sarah C Like most other waffle batter, if you make it the night before, it should be alright. I won't recommend that you make it a few days ahead though. It's quite a simple batter, so it's always better to make it fresh on the day of. Hope that helps. Let me know if you have other questions.
Hi Amy, thank you for sharing your receipt. Is the eggettes half filling inside? The Authentic HK style eggettes should only has half of inside filled (soft) and the other side no filling and remind crunchy inside-out. And of course the entire outside should be crunchy, otherwise it's just like miniature "paper wrap cake" which is most people making. I have been looking for a place to have it but unfortunately still haven't find it... all so called HK style eggettes has full filling.. :( I think people forgot or don't know what's the Authentic HK style is.. really sad...
You're most welcome and thank you for taking the time to leave me a message. I tested out this recipe for a long time to achieve this recipe, that's as authentic as those you can find in Kong Kong (my home country). ;) I grew up eating this HKG street food more often than I probably should have! :D To answer your questions, yes, these Eggettes are crispy on the outside, and fluffy on the inside. There's an air pocket in each eggette, I guess that's what you refer to as "half filled"?Give this recipe a try, I'm sure you'll love it too! Happy cooking!
Hi Amy, thanks for your quick reply!! Yes, I guess that's call air pocket, half of the inside pocket is not filled and Not fluffy; only half of the pocket is filled and "fluffy". I went to HK recently and tried the Eggette at Lee Keung Kee North Point Egg Waffles. That's the exact taste and texture I had almost everyday after school when I was kid. It's so unfortunate that I don't find it at where I live now, and people here are thinking full filled pocket is good. :( I'll try your recipe when I get a chance (need to get the makers first), will let you know how it goes. Thank you again! I really love to eat and really picky on food.
Oh...How lucky that you get to visit HK! I'm always home sick, especially for all the street food! And of course, for my friends and family over there too. :P I totally can relay when you say "love to eat and really picky on food", because I am the same way! That's why I started my food blog and RUclips Channel! Because some authentic/traditional food are just hard to find when you're away from your home country! About the waffle maker, my Dad got that for me when he visited HKG (in ShangHai Street). But I know they sell similar ones online as well. :)
Can I use some sugar substitute (stevia, Splenda etc) and would any plant based milk work (or at least yoghurt/Greek yoghurt) instead of evaporated milk? xx
I am not too sure if using sugar substitute would work because I haven't try that. Beside sweetening the waffles, the sugar also help these waffles get the gorgeous golden brown color during cooking. I'm just not sure if stevia or splenda can do the same. You can substitute the evaporated milk with any non-dairy milk you like. Just keep in mind that the flavor would turn out different because the evaporated milk gives these waffles the rice flavor they need. So, maybe try coconut milk as it add a nice coconut flavor, at least. Hope that helps.
I haven't try it on an electric stove top. Not sure if the pan can conduct heat evenly on a flat surface since the pan itself had irregular shape on the outside.
@Amy Tang hello im really interested in making this recipe. This is a new trend that id like to establish in my country as I know it will be a big hit. Can u please tell me what the recipe will be if i were to make it in big amount? Like 50 eggettes? Also i saw another video where the guy used Vanilla custard mix ? Would that be fine to use instead of custard powder? Id like mine to be savory and really tasty. Pls help amy.
Here's the link to the recipe. It's also posted right below the video. This recipe is meant for home cooking, hence 1 recipe only make 3 waffles. You can multiply the recipe amount to whatever you need. But you might need the proper equipment for the mixing. I don't know what recipe or what type of vanilla custard mix you saw from other place, so I won't be able to tell you the difference. I am guessing, if they called it a custard mix, it's probably has sugar, flour, or some other ingredients that you don't need in this recipe. So please stick with custard powder of you follow my recipe. Hope that make sense.
Oh, you should totally get the griddle! It's one of the best kitchen investment, in my opinion. We love it so much! I make these eggettes for my family every once in a while. Better yet, you make create your own flavors! ;) You're most welcome on the tip. Happy cooking!
hi Amy Tong, I wanna make it more crispy and keeping it crispy for a long time after cooked. same as "北角鸡蛋仔“ .Their egg waffle look so hard when they remove it from the pan that's why it more crispy. Do you have any solution for that??? I heard some one said add more Tapiaco powder, Or more water(thinner), Or heat 7 minutes with temperature(150c) Or high temperature heat. Please advise me. Thanks a lot!!!!
Kenny Tang Adding more tapioca flour and deduct some regular flour is good advice because the tapioca flour is what makes the crust crispy. More water to thin out the batter would work too but you probably need to cook the waffle longer. You've got to test out the amount to get the consistency you like. My kids like the tender inside and crispy outside texture and that's what you get from my recipe. You can do some adjustments from there. 😉 Happy cooking and hope you'll have success on your testing.
Ujbevs Lim It shouldn't be separated. It never happened to me like that when I make this. Do you flip the waffle pan upside down right the way after you pour the batter in? If so, the batter would evenly distributed and becomes one piece. Hope that helps.
hai thanks for the very helpfull video, btw can we subtitute the evaporated milk with whole milk? and can we leave out the custard powder and just add 1 more egg?
+Vinod Daryanani You're most welcome. I don't recommend substituting the evaporated milk with whole milk. The reason is that evaporated milk has less water content compared to regular milk. Therefore, the flavor is a lot more concentrated. Also, the custard powder has the rich egg and sweet aroma that a regular eggs don't have. Plus, it'll be too much liquid to add if you replace the dry custard powder with an egg. It'll completely change the consistency of the batter. If you can't find custard powder in your local market, you can get it online here: goo.gl/hwKgPe I hope my answer helps.
No, this is more of a waffle recipe. If you want to make pancakes, check out this one instead: ruclips.net/video/h7A_NvVsCl4/видео.html You can leave out or add other fruit that you like. Hope that helps.
Not sure what country you are from, I am in the USA and always need to order online here: www.amazon.com/gp/product/B000JMBE7C/ref=as_li_tl?ie=UTF8&camp=1789&creative=9325&creativeASIN=B000JMBE7C&linkCode=as2&tag=a0464-20&linkId=XVXFX2LJQQXPCWZV It's more popular in Asia and Europe. Hope that helps.
+kaki chung Not too sure where you live. But I know many Asian Bakery stores carry custard powder. If not, you might want to order it online here: goo.gl/hwKgPe There's really no substitute for this ingredient.
+Thuy Vu My Dad got the mold for me when he traveled to Hong Kong. But I found a similar one online here: goo.gl/N3Xr7c Another alternative is an electric bubble waffle such as this one if you prefer not to stand around the stove top: goo.gl/XTTw3w Hope that helps.
Custard Powder is an important ingredient for these Eggettes as it gives these bubble waffles the wonderful egg flavors. It's a dry powder used to create custard by adding milk. Custard powder might not be a popular ingredient in the U.S., but it's quite popular in U.K, Australia, and Asia for sweet treats and desserts. Hope I answer your question. Feel free to let me know if you have other questions.
My Dad got me the pan from Hong Kong. But you can also get it online here: goo.gl/N3Xr7c If you prefer an electrical one, this is another option: goo.gl/XTTw3w
Malabika DasDas There isn't any substitute for tapioca flour that I known of. It's what makes these bubble waffle crispy on the outside. So, it's an important ingredient in this recipe. Tapioca flour is available in most supermarket these days. Otherwise, you can get it online as well: www.amazon.com/gp/product/B0019GZ87Y/ref=as_li_tl?ie=UTF8&camp=1789&creative=9325&creativeASIN=B0019GZ87Y&linkCode=as2&tag=a0464-20&linkId=TBXHNWTLZGIPYVZP
+Ben Lam What is your reason to substitute the tapioca flour? If it is because you can't find it in the market, you can get some online here: www.amazon.com/gp/product/B0019GZ87Y/ref=as_li_tl?ie=UTF8&camp=1789&creative=9325&creativeASIN=B0019GZ87Y&linkCode=as2&tag=a0464-20&linkId=TBXHNWTLZGIPYVZP The reason why I don't recommend you to make a substitution on the tapioca flour is because that's what makes these waffle crispy. If you use a substitute, you might not get the classic crispy edges for these egg waffles! Hope that helps.
I know there's egg substitute out there in the market that you can use. (I personally don't use them so I won't be able to recommend you a grand) Or, just use more custard powder and mix it with water for the right consistency. The custard powder has great flavors and it's one type of egg substitute for many people. But each brand might contain different ingredients. You might want to check out the ingredient list to make sure you're okay with it before using. I personally love the flavor of Bird's brand. Hope that helps.
@@sinuvarghese7546 these are fluffy when I use regular flour. When you said GF flour, I was thinking the GF flour substitute, not just straight almond flour. There are GF flour in the market, or you can make your own. I know the store bought ones combined with rice flour, bean flour, etc depending on the brand. Those should give more fluffiness than just almond flour. Hope that helps. 🥰
I agreed. This is one of my older videos that I haven't start voice over yet. My newer video has voice over instructions now (unless my clients prefer not to have it) Maybe I'll film another bubble waffle video (with different flavor) and do a voice over in the future. Thank you so much for your feedback! 💖
Bunnies4wool Custard powder is an egg free product that is used to make instant custard. It's packed with eggy and Vanilla flavors. A common ingredient used in these bubble waffles.
For the stove tp Bubble Egg Waffle Pan like this one here: goo.gl/N3Xr7c You can pretty much use it anywhere. Here's the electric version: goo.gl/XTTw3w Some of my friends got this one and said it works well. You can use it in Hong Kong with an adapter. If you live in Hong Kong, you can find the stove top version from ShangHai Street. That's where my father got mine. Hope that helps and let me know if you have other questions. :)
Do you have a set of measuring cups? You do need exact amount for this recipe. And 3/4 cup is 3 quarter of a cup, NOT 1 cup+1 cup!!! This is the link to the recipe with all the ingredient measurement: utry.it/2015/07/hong-kong-style-eggettes.html The link is also right below of the video. To make it easier for you, 3/4 cup sugar = 150 grams; and 1 cups all purpose flour = 125 grams. Hope that helps.
Oh...I see what you mean now. You're correct, the measuring cups usually don''t come in 3/4 cup. But if you use a 1/2 cup + 1/4; or 3 times of the 1/4 cup, that equals to 3/4 cup that you need. :) Hope I'm not making you more confused. Have fun making these Eggettes, they are really yummy!
Você pode usar o google tradutor para fazer isso por você. translate.google.com/ Here's that link to the written recipe: goo.gl/fkZDmi Hope that helps and happy cooking.
Sorry that happened to you. I don't have an electric one so won't be able to tell you the settings. Hope your next try will be better. A few of my followers told me they have the electric one and works well. Guess you need to try different heat level to get the one you like. Happy cooking!
I don't have a cake pop maker so I can't tell you for sure. But the indent of the egg waffle plate is quite small, so they probably will come out different. Also, the egg bubble waffle maker allow the batter to flow and connect all the egg waffle together instead of making individual cake pop. Lastly, the bubble waffle maker or mold, along with my recipe yield crispy waffle on the outside and tender inside. Not sure if cake pop maker can make the outside crispy. But if you decide to give it a try, please let me know how they turn out. Hope it helps answer your question.
I just made it! Very delicious! A bit crunchy outside and soft inside! Love it!
Thank you so much for trying the recipe! I'm so glad that they turned out perfect! :)

Hi Amy. I tried using this recipe but only one side is covered with batter and the other side not despite turning like how it's supposed to be. Is it because the batter too thick? Or it get cooked too fast on one side? Also is it ok to skip evaporated milk?

Thank you Amy .In my cuntry its already sale .But don't want share recipe .
150 gm flour, 30 gm rice four, 1 ½ teasp Baking Powder, ½ teasp Baking soda, ¼ teasp salt, 2 Tbsp sugar, oil, 250 ml milk, 2 eggs - separated
Filling :- Sausages, onion - all diced. frozen mixed veggie. Fry, season it and cool them.
Cheese also diced but don’t fry -- optional
Beat egg white with pinch of salt until peak.
Beat all the ingredients in another bowl until smooth
Then fold in 1/3 of the beaten egg white with the hand egg beater is the best way and then the rest of egg yolk batter.
Add in the fried sausages mixture.
Nate : -- You can make the waffle like pancake. Or cook in your bread toaster sandwich pan if you don't have a Waffle maker.
I love I'm Chinese so I love to eat this food
This is THE BEST !
Lar M Thank you! Yes, this is very yummy, in deed. 😋
I’d be cool if you could put all the ingredients in the description box. Thx
Thanks you
You're welcome. :)
Yours welcome
Bonjour ! Where can i buy this pan waffle Bubble ? I am french merci 😘😍❤️
My Dad got me the pan in Hong Hong. They also sell one similar online here: goo.gl/N3Xr7c
My friend tried the electric one and she it it works well too.

I hope they ship to where you live! Happy cooking!
The heat level, what is it set to?
I set my stove to medium heat (see video at 2:08). Sorry the white caption isn't the easiest to read over the silver stove. Please let me know if you have other questions. Happy cooking! 💗
can this batter last in the fridge for a few days? or must it all be used in the same day
Sarah C Like most other waffle batter, if you make it the night before, it should be alright. I won't recommend that you make it a few days ahead though. It's quite a simple batter, so it's always better to make it fresh on the day of. Hope that helps. Let me know if you have other questions.
What us custard powder? And whats the substitute?
Hmmm, nice to see the old technology. But hey, why skip the last steps - would love to see how you seal it and cut it.
Thank you so much for leaving a comment. 🥰 Usually, we don't cut into these bubble waffles. You simply break off each one and enjoy! 😋
Where can I buy a waffle pan
It'll be nice if ingredients r listed in description box and in metric measurements.... I gave up as there's just too much to convert
hi. do you think it will be okay if my stovetop is electric? thanks.
@Amy Tong .. saw a guy in another video used vanilla custard batter mix thats ready made . What id like is for it to be tasty. Would that be fine?
Here's the link to the recipe. It's also posted right below the video. This recipe is meant for home cooking, hence 1 recipe only make 3 waffles. You can multiply the recipe amount to whatever you need. But you might need the proper equipment for the mixing. I don't know what recipe or what type of vanilla custard mix you saw from other place, so I won't be able to tell you the difference. I am guessing, if they called it a custard mix, it's probably has sugar, flour, or some other ingredients that you don't need in this recipe. So please stick with custard powder of you follow my recipe. Hope that make sense.
love it!
I dont have tapioca starch, should I replace that with more plain Flour?
No
My wife will be really happy if I make this for her :) You vidoe made me want to invest in one of these griddles now. Thanks for the tapioca tip!
Noted. I will try.
Thanks for your advice !
Kenny Tang You're most welcome. Let me know how they turn out! Happy cooking! 😊
I try to make but why is separate after cooking? Is it like that ? Not like other I make when it's cooked its steamy together ..
If you can't find custard powder in your local market, you can get it online here: goo.gl/hwKgPe I hope my answer helps.
would it be good if i made it as pancakes?
No, this is more of a waffle recipe. If you want to make pancakes, check out this one instead: ruclips.net/video/h7A_NvVsCl4/видео.html You can leave out or add other fruit that you like. Hope that helps.
hi, can you tell me how many waffles can I Do with this recipe? thanks!!!😙
You get 3 full size waffles with this recipe. Happy cooking!
Amy Tong thank u sweetie😙😙
hi amy, whats the function of tapioca flour in this recipe?
The Tapioca flour is used to make the outside crispy. 😉
thanks for the fast reply. im gonna try to put some tapioca flour 😜
you're welcome. have fun cooking. 😉
I can’t find custard powder. What can I use instead?
Not sure what country you are from, I am in the USA and always need to order online here:

It's more popular in Asia and Europe. Hope that helps.
Wow
Where to buy custard powder here in philippines
Many baking shops in Asia carry custard powder. I usually bet it online here goo.gl/hwKgPe Not too sure what shop has it in Philipines though.
I can't find any custard powder, what I can replace with? Thank you
+kaki chung Not too sure where you live. But I know many Asian Bakery stores carry custard powder. If not, you might want to order it online here: goo.gl/hwKgPe
There's really no substitute for this ingredient.
Can I please ask where can you buy the mold
+Thuy Vu My Dad got the mold for me when he traveled to Hong Kong. But I found a similar one online here: goo.gl/N3Xr7c
Another alternative is an electric bubble waffle such as this one if you prefer not to stand around the stove top: goo.gl/XTTw3w
Hope that helps.
+Amy Tong amy yuo said your dad buy the pan in hongkong can you tell me where is the place because I also stay at hongkong now thanks
My dad got the pan in Hong Kong on ShangHai Street. Or you can find it online as well: goo.gl/N3Xr7c
Dear Amy,
I wish I could make these..
Yesterday my mom did buy the machine hehe
@@asm_clc invite me I need these
@@mattiasjorge7741 sorry my family is really big so they eat all up😌
what evaporated ?
Hi, What is custard powder? Is that Maizena powder? Thank you
Custard Powder is an important ingredient for these Eggettes as it gives these bubble waffles the wonderful egg flavors. It's a dry powder used to create custard by adding milk. Custard powder might not be a popular ingredient in the U.S., but it's quite popular in U.K, Australia, and Asia for sweet treats and desserts. Hope I answer your question. Feel free to let me know if you have other questions.
Thank you...
you're welcome. :)
where can I buy this Eggette pan?
My Dad got me the pan from Hong Kong. But you can also get it online here: goo.gl/N3Xr7c If you prefer an electrical one, this is another option: goo.gl/XTTw3w
請問有中文的食譜嗎?
對不起,還沒有中文食譜。 但您可以使用Google翻譯幫助翻譯。
What can i use instead of Tapioca flour?
I think cassava flour can. 😊
What can i use to subitube tapioca flour?
+Ben Lam What is your reason to substitute the tapioca flour? If it is because you can't find it in the market, you can get some online here: www.amazon.com/gp/product/B0019GZ87Y/ref=as_li_tl?ie=UTF8&camp=1789&creative=9325&creativeASIN=B0019GZ87Y&linkCode=as2&tag=a0464-20&linkId=TBXHNWTLZGIPYVZP
The reason why I don't recommend you to make a substitution on the tapioca flour is because that's what makes these waffle crispy. If you use a substitute, you might not get the classic crispy edges for these egg waffles! Hope that helps.
+Amy Tong thank you
+Ben Lam you're most welcome. Have fun cooking. :)
Heyy , is there any substitute for eggs? I am a vegetarian.
Hope that helps.
can we use gluten free flour?
I haven't try it with this recipe yet so I am not 100% sure. But don't see why not either. Please let me know how it goes if you try it. 😊
@@uTryIt i tried with almond flour and it wasnt good. may i know how can we create fluffiness for the bubbles?
@@sinuvarghese7546 these are fluffy when I use regular flour. When you said GF flour, I was thinking the GF flour substitute, not just straight almond flour. There are GF flour in the market, or you can make your own. I know the store bought ones combined with rice flour, bean flour, etc depending on the brand. Those should give more fluffiness than just almond flour. Hope that helps. 🥰
This video is great but I wish there would be talking and telling the texture of it
I agreed. This is one of my older videos that I haven't start voice over yet. My newer video has voice over instructions now (unless my clients prefer not to have it) Maybe I'll film another bubble waffle video (with different flavor) and do a voice over in the future. Thank you so much for your feedback! 💖
Thank you Amy. I will try this bubble waffle out this weekend.
@@itran888 Have fun cooking. Please let me know if you have any questions! 💖

what is custard powder?
Bunnies4wool Custard powder is an egg free product that is used to make instant custard. It's packed with eggy and Vanilla flavors. A common ingredient used in these bubble waffles.
hi amy,can you tell me where i can purchase waffle pan that you use in hong kong,or china, have tried taobao and jd.com many thanks
I don't have the right measurement. ..what does it mean 3/4 cup ??? how many cup ??? it is 1 cup +1 cup ??? any help ???
Do you have a set of measuring cups? You do need exact amount for this recipe. And 3/4 cup is 3 quarter of a cup, NOT 1 cup+1 cup!!! This is the link to the recipe with all the ingredient measurement: utry.it/2015/07/hong-kong-style-eggettes.html The link is also right below of the video. To make it easier for you, 3/4 cup sugar = 150 grams; and 1 cups all purpose flour = 125 grams. Hope that helps.
+Amy Tong I have the measurement cup measure 1 cup, 1/2 cup , 1/4 cup except 3/4 cups..but thanks anyway I will figure it out..
THANKS FOR YOUR HELP ..
You're most welcome. ;)
I went to Hong Kong but never got egg waffles :(

I tried using the electric one I didn’t know it heated up so fast and ended up burning both batches
Sorry that happened to you. I don't have an electric one so won't be able to tell you the settings. Hope your next try will be better. A few of my followers told me they have the electric one and works well. Guess you need to try different heat level to get the one you like. Happy cooking!

You know that egg waffles unattached looks like plain macaroons
hehe....very creative thinking! :) But they taste totally different though.
Can't you just use a cake pop maker instead?
I don't have a cake pop maker so I can't tell you for sure. But the indent of the egg waffle plate is quite small, so they probably will come out different. Also, the egg bubble waffle maker allow the batter to flow and connect all the egg waffle together instead of making individual cake pop. Lastly, the bubble waffle maker or mold, along with my recipe yield crispy waffle on the outside and tender inside. Not sure if cake pop maker can make the outside crispy. But if you decide to give it a try, please let me know how they turn out. Hope it helps answer your question.
