For those wondering about the LED versions. I have a Unox Bakerlux Arianna LED build end 2021. I can set a step with Fan speed 0. So I guess newer versions can set a fan speed 0. What I set a step with 0 Fan speed at 150 degrees. So step 1 is 1 minute 260 degrees, humidity 100% Fan speed 1 - step 2 10 minutes 150 degrees - 0% humidity - 0 fan speed - step 3 20 minutes 225 degrees - 0 humidity - fan speed 1.

With the new firmware update (applicable to TOUCH version only) which has the option to set the Fan speed to 0, you may set it as 1 of your steps in your parameters, there is no need to turn off the oven and remove the bread. For this recipe, you may set your parameter as the following (applicable to TOUCH version) Program 1 Preheat : 260C 20 minute, 260 C (preheating Fakiro) - You may set it as Step 1, or turn on Infinity setting to preheat Fakiro along with the oven. Program 2 Baking: Step 1: 1 minute, 260C, 100% humidity, Fan Speed 1 Step 2: 13 minute, 60C, 0% humidity, Fan Speed 0 (resting time) Step 3: 5 minute, 225C, 0% humidity, Fan Speed 1 Step 4: 8 minute, 200C, 0% humidity, Fan Speed 1 Step 5: 6 minutes, 160C, 0% humidity, Fan Speed 1

no, we dont remove the bread. just leave it inside. If you do not have the Fakiro tray, you may try the exact same temperatures but skipping the resting step. However we would strongly suggest you to get the Fakiro tray as using only the aluminium tray will cause the bread to not rise as high as it should. The Fakiro tray holds in heat to allow the bread to spring up when resting, it gives the same effect as using a dutch oven when baking in a home oven
Hi. I just bought the manual version of the Arianna. Struggling to get a good oven spring. I open bake with 2 cookie sheets under and lava rocks. Could someone help me with tips please?
Hi we would suggest getting the Fakiro tray for better oven spring. The cookie sheets are not able to hold heat as well, even with the lava rocks thus not giving a good oven spring for your bread.

@@ilova7 The 20 minutes preheating step is to preheat the Fakiro tray to ensure its hot enough to allow good oven spring during the 10-13min resting stage when the oven is turned off. Allowing the dough to be in a moist environment in the oven allows the outer layer of the skin to gelatinize to form the crust, and also not dry out, allowing it to expand without breaking. We allow the dough to sit for 10-13 mins in an oven that is switched off because we want to give the dough some time to expand without any additional heat circulation or wind which could cause the crust to start forming before the dough has grown to its maximum size. The dough has sufficient heat from the Fakiro tray and the oven chamber to do this. As for the steps, the chef is using the LED model which only allows 3 step Baking, hence he needed to turn off the oven manually. However when using the Bakerlux Shop.Pro Touch model, users are able to set all 5 steps immediately from steaming to the end of baking straight away.

Cause it’s a fully convection oven, there’s no option to turn off the fan. Only way to do is to turn off the whole oven.
