Post-Run Smoked Tofu Stir Fry (EASY LUNCH RECIPE!)

- Try this easy smoked tofu stir fry with zucchini and carrots over rice that I make after my weekday runs for lunch.
👨🍳 RECIPE
2 Tbsp olive oil
1 medium-sized onion, chopped
1 zucchini, chopped
1 carrot, chopped
1 block of smoked tofu, cubed
1 Tbsp smoked paprika
1 tsp turmeric
STIR FRY SAUCE
2 Tbsp soy sauce
2 Tbsp olive oil
1 Tbsp honey
3 cloves of garlic, minced
1 tsp peanut oil
1 tsp mirin
1/2 tsp dried ginger
INSTRUCTIONS
1. Sauté onions over medium-high heat for 5-7 minutes. Prep zucchini, carrots, and stir-fry sauce in the meantime.
2. Add zucchini and carrots, seasoning with smoked paprika and turmeric. Cook for 3 minutes and then add the stir fry sauce, cooking for another 1-2 minutes.
3. Remove from heat and serve over rice.

Same! Way back when, I hated tofu. Now I'm *mostly* okay with it. But as you said, this tightly packed smoked tofu is an absolute game changer!
