Cava is so balanced in terms of acidity and alcool bublles, its very dry when brut , that you can pair it with allmost anything or just drink it alone.
I had no idea the Spanish call their champagne Cava now. In Oz, it's just called Sparkling *insert grape name here*. (And Port is now called Tawny). That looks like some good fried chicken!
Port is called tawny? that is called ignorance... Port is a dessert wine tawny only mean that it is agend in oak barrels instead of in the botlle. grape varieties and the terroir mean a lot in the flavour.

This was the one I paired with the Dom's Chop Salsa Hatch Pepper salsa on my channel. I liked it a lot too.
