    Interpretation and the practical opportunity of available supplies and preferred seasonings is the essence a great result. I enjoy adding to my mental collection of starting point recipes and sauce techniques. Canada has a significant dairy industry so easy access to quality milk and cheese products. No shortage of bacon and potatoes and onions in my region. Today is Canada Day thus my emphasis is on preparing meals honouring Canadian farmers, growers and small food producers.

    Dang, thats making my mouth water! Looks fantastic. Just want to make one point. The "white sauce" you made, before adding the cheese, is what we call milk gravy. We use it, made just like that, over biscuits. (Which i believe are similar to your scones.) Biscuits and gravy! Here in the southern United States it ain't breakfast without it. Throw in meat of your choice and a couple over-medium fried eggs, and you have the breakfast of the gods!

    That's like our has browns or cottage fries and who would have ever thought of adding bacon and enveloping it all in a super cheesey sauce?! Wow, Chef!! Absolutely amazing. A meal in itself.. or with a veggie side, or a steak, or some Brats, or BBQ chicken. Just Wow! Love the ideas of tossing in mushrooms to the mix too. Would have to half the recipe for just two... or.. I wonder how well it would freeze?? Shirley in NH

    I do this at Christmas with leftover gammon just add spring onions and some mushrooms. Real comfort food after the over indulgent festivities. It's a winner! Thanks Rik

    That looks like my kind of meal,with some broccoli.I am going to make that.I made many hundreds of pots of white sauce,and always did it the same as you,never understood the pouring in of drips,and draps of milk.😊

    Hi Rik. Exactly the sort of recipe for a family midweek supper. Filling and nourishing. I miss haviing all my girls at home because this is the sort of meal we would have after a hard day at school / college / hospital .     When I was in the French restraunt we used to do our potatoes cubed and fried similar to what you've done here, ( should mention here that the potatoes were boiled first in salted water for about 5 minutes ) but then dried and were fried in garlic and served as a silver service side with cooked green beans served the same way. Delicious!

    Here in the U.S. this would almost be a hash brown casserole. I’m so glad to see you add the milk all at once. I see cooks say add the milk a little at a time to prevent lumps! Pooh! I always add my milk like you do and I’ve never had any lumps. The trick is in the whisking!

    I’ve been told that an air fryer is just a small fan oven.
    I don’t know if you agree, Rik, but if it is, it may give people who haven’t got an air fryer a bit of confidence to know that.

    Just came across this receipe. My spouse is going to have delicious surprise when he returns from shopping. I enjoy making cheese sauces.
    Often add Worchestshire sauce with powered English mustard. Nice 3 cheese mix. Thanks for all the wonderful meat recipes.
    Would like few more veggie only ones and fish. Although with fish is best cooked quick and served with extras on side.
    Made lemon curd using your method. Great and easier to do. Added a blob on side to plaice fillets interesting flavour. Thank you.

    I cook this dish occasionally, sometimes with bacon or some leftover smoked ham (cubed). A nice touch is to sprinkle breadcrumbs on top of the last layer of cheese before baking. Everyone loves this satisfying comfort dish, even the fussy, picky eaters.
    If you substitute partially cooked macaroni for the potatoes, you will have a tasty deluxe mac & cheese dish too. Served on its own with a salad or cooked broccoli to counter the effects of a cheese-heavy dish for some people (bungs them up).
    Goes also nicely with a boiled or fried sausage or a cutlet. Enjoy!
