How does you get those sticks to actually stay in the middle!!
Probably the consistency of the mix
Take paper and cut a small hole in it, then put it over the popsicle mold and tape it to the edges, then put the stick in and it shouldn’t fall all over the place
My hack is to put a plastic wrap on top and piercing the sticks through it
dip the stick into melted chocolate and then the stick will stay in the middle because the chocolate will get hard.
He used coconut milk which is thick. Therefore like custard, the stick won’t budge

Maybe you could try yogurt?
Yogurt definitely would work, as would creme fraiche. I've used sour cream with good effect,but it only really pairs well with acidy fruits like citrus.

Some people like advocado as well. Blend it, possibly with a little water, to make the right consistency. I personally do NOT like it for the chocolate dishes I have tried but I’m pretty picky. Anything fatty that you like would work.

I would recommend plain or vanilla yogurt. The coconut milk is thick, and kind of creamy, so get regular instead of greek style :)

I like this channel because it actually gives you the ingredients for the recipes. And I definitely want to make some of these.
I have one more for you: puree pineapple and coconut milk (same ratio as the mango), add 1tsp fresh grated* ginger and 1tbsp of citrus juice (I prefer grapefruit). It's very tasty and has a bright/tropic piña colada vibe :)
