Hi chef...i just made this for a early fathers day celebration tomorrow ...it is amazing ...oh i just did a pinch of salt and i didn't have any custard powder ..so instead i used vanilla coffee creamer 😂...let me tell u...i stocking up on vanilla coffee creamer ( powder) from now on...it made the mathi so so soft and creamy and vanilla tasting ....but over all ...my husband done circling around ...oh and i did a zest of orange in the syrup and a splash of vanilla ....thanks again ...

No. You can replace the coconut milk with evaporated or whole milk. Using all condense milk makes them too soft they may fall apart. Also you can add salt (don't add if you are making for a puja- Hindu religious ceremony)
You can but it will make the mithai very very rich. Some people find it overwhelming. So what you can do is not put the coconut milk or condensed milk..... and instead of using the full amount of fat as ghee just use less. So instead of 1 cup use lime 3/4 cup. Also if you're making this for puja you would need to take out the custard powder and baking powder (but I am not sure of a replacement for baking powder)
If this wasn't soft then you probably kneaded it too much. Or a few other things could've happened. Make sure the butter is cold, that you make the dough soft enough, and don't overfry it.
My mom use to make one similar to yours It was a Trinidad recipe made with Condense milk cardamom and spices. But she never rolled and cut it, she formed it with her hands. I don't remember all the ingredients.

Test a few pieces of the mithai in a small bowl and toss with a little of the sugar syrup. Look at my newest bite size mithai recipe and I show the sugar syrup

I gave this a try, best matthai I ever had!! Yummy! I added the anise seeds whole since I didn't feel like crushing them. Making this again for sure!

Hey Matthew what do you think about dusting icing sugar over the mithai or kurma instead of paag?
You can drizzle some condensed milk and the sprinkle powdered sugar to dry it up

Hi Matthew I am having problems with the parag it's not forming the sugar coating. What can be used alternatively?
You can use condensed milk and powdered sugar instead. If the paag isn’t forming it means it needed to cook longer.
I tried for Eid today, i used all the syrup, it took time to dry up, maybe didnt have to use all syrup?
You don't have to add all if you dont want a thick coating but I like to add it all. It takes a few min to dry up

Yes you did.
I followed this, my mithai tasted amazing but was not soft like I remember...is there something I could do next time to make it softer.

Yum. Sounds like Trini goolab jamun. Some Guyanese people form in their hands too if I am not mistaken, but mostly it is cut and fried.
