I mean, Glitchtale Gaster doesn't have a visible nose but he's a skeleton. That and supposedly, cybertronians can smell, but they don't have visible noses. So maybe Gaster can smell despite not have a visible nose. Kinda like how the skelebros can hear but they don't have visible ears.
