the reason why you lose so much stamina is because of fluid formation being turned on. Your players are forced to run up and down the field as they adjust to the slight differences in formation when in and out of posession of the ball. also make sure you have flexible positioning on to allow them to move around freely.

Sander i would like to give u a tip about defending at eFootball is good when the ball is at ur box or inside ur defense u should press square instead of X because the game will throw it away fast as possible
