    I'm from North Carolina but living 10 years in Indonesia. I found coarse ground yellow corn in the traditional market that made a nice polenta but not the same as grits as it's too coarse. An Indonesian friend asked about making mozzarella corn dogs but we only have corn starch not corn meal here. So I tried using the dry ingredient blender attachment on my blender and then sifted out the corn meal and the remainder is the perfect consistency for grits. They say a country boy can survive and I think I have proven that statement as not only will I be eating grits for breakfast but I'll be able make corn bread too.

      Grits are ground up corn kernels. They are cooked to make something similar to polenta.

      It's not just ground corn. Grits are made from hominy, not just plain ground corn.

      Yea, it's more than just ground corn. Like the previous guy said it's made from ground hominy corn. You probably don't know what that is either, but somebody thought to take perfectly good corn and soak it in lye. It puffs up and gets funky, making hominy. A traditional dish of my people. It tastes like shit, but you dry it, grind it, boil it, now it's grits. Just add a bit of salt and butter and it's awesome. And don't judge, y'all Scandinavians eat some pretty wierd shit too.

    I visited north Florida recently from the UK and had plain grits for breakfast. It was so simple, subtle, easy to eat and filled a hole. I could easily eat that every day. A simple pleasure.

      @@jennquiles it's 4.5 to 1 liquid to grits. Liquid should be 50/50, stock or water to diary.

    I just had bacon, eggs, and grits for breakfast this morning. I am homebound because of a foot injury, but I can still get into the kitchen. The bacon was from Andre's Meats in Earl, Berks County, PA and the eggs were from a local farmer. They were cooked in a Lodge 10" cast iron skillet. I have a few sources for original grits and usually buy 10 pounds at a time. While the grits are cooking, I cook the bacon and eggs.

    Folks, bad advice here... water has no flavor; don't use it. Use half Chicken Stock and half Milk. Your Grits will be creamy smooth and full of flavor.

    This is perfect, a simple recipe to cook the grits. I can elaborate on it if I want, but this is the basic how-to-cook-em. When camping, I don't have milk, butter or several other nice additives. But I can follow these simple instructions. I was given a BIG sack of grits, and now I can start getting into them. Thanks!

    Just about every region in the South has their own "best way" to make grits, and sometimes different regions of individual states will have disagreements with strongly held opinions. Personally, having had opportunity to sample most, I have to give hats off to the Delta region. From New Orleans up to Memphis, those are the best grits. Some parts of Texas also use the Delta formula. If you want to start an argument in the South, talk about the best way to make grits. Even better, talk about the Southern way to make Chicken and Dumplings; you're sure to get some heated arguments. Interesting that you can find grits in restaurants all across the South, but Chicken and Dumplings, a common Southern family favorite, is a bit more rare in the restaurants. (By the way, I know how my mother made Chicken and Dumplings in the true, authentic, Southern fashion, but regrettably, it's a closely held family secret.) As far as Southern cooking goes, the east coast Southern states seem to make the best spoon bread. I've had bad spoon bread almost everywhere except North Carolina, South Carolina, and Georgia. The trick has to do with exploiting the full absorptive power of the cornmeal. This is done is various ways; my preferred method uses a double boiler to achieve the perfect level of a absorption before things are even put in the oven. Now, we shouldn't get into a discussion of cornbread. I will only say that if you put flour in your cornbread, it isn't a traditional Southern cornbread. These days, that means that many, many Southern cooks have lost sight of the traditional way. My Grandma would put would put a look of total revulsion on her face at the very thought of four in cornbread. She also said that her mother's wood-burning stove made the best cornbread. I never complained about what she was able to achieve in a modern electric oven, though.

    A Brit here, I've heard of Grits before but never knew what they were...we certainly don't have anything like it over here, but I'm curious to try them! Hopefully when I visit Charleston/Atlanta this August!

    NEVER, NEVER use water. Use chicken broth, half and half and cook low and slow. No lid. Add liquid as needed. Salt, pepper, cheese, cream cheese added makes for a tasty plate. Or make a gravy with tomatoes.

      Add half an half with the chicken broth INSTEAD OF water. You get a creamy, savory porridge like dish. You can substitute this side dish for mashed potatoes at dinner. Or of course, eat grits for breakfast.

      1. Be overly polite to everyone
      2. Say.... Maam to everyone and Sir
      3. Make a bowl of genuine grits
      4. Eat them while watching THE DUKES OF HAZARD haha (original series of course)

    ditto below, still no idea what grits are and that is the reason I switched on, also 4 cups of water and bring to boil, would you not cut the time down drastically if you boiled the water in the kettle first and then brought back to the boil?

      I use 2 cups of water, 1 tsp salt and 5 Tbsp grits (thus ratio is 6.4 to 1. I stir the grits into the cold salted water, bring to a boil (stirring) then cover and reduce heat to simmer for 15 minutes. Stir in butter and enjoy.

    The instructions are very clear. It tales nothing to make grits. He was just saying there are different types of grits. The stone ground grits takes longer 2 cook than regular grits (which is what I use) it takes about 4-5 minutes. Everything he said was accurate. Just the cooking time is different for stone ground grits. Which looks yummy

      AK,
      Chicken bouillon cube into water or milk, boil, add a pat of butter, reduce heat as low as possible just before you add grits, stir continually, as it thickens /cooks. Shut off heat, cover with lid. 10 minutes later add another pat of butter along with crumbled cooked bacon, or slice of ham, sprinkle with sugar ( perferably brown sugar ), drizzle with maple syrup. Add whatever YOU want /like. Cook for yourself ...

    You need 1 cup of grits. I have no ide as why he didn't include that in the video. I assume that he thought we already knew. Probably got distracted about the give us a tip about covering the pot to reduce cooking time. Although I could be wrong.
