INGREDIENTS
1.5 lbs chicken
little skin, thigh (dark meat) breast (white meat)chopped skin, white and dark-meat chicken prefer hen
Raw sticky rice Roasted to get ground 1 full Tbsp ( or you can get this from the local Asian store but it’s just too finely ground )
Dried roasted chili powder, preferably Asian kind
1/2 tsp fish sauce
1/2 tsp padek (fermented fish sauce)
1/2 tsp msg
1/2 tsp sugar
1 tsp chicken flavor mix
2 whole freshly squeezed lime juices
1 shallots
1 jalapeños
Some galangal for Roasted
Some kaffir lime leaves for Roasted
3 fresh kaffir lime leaves
chopped cilantro
Slice/chopped green onion
Whole mint leaves
Chopped mints leaves
Lettuce leaves
cucumber for serving
