Stewed GIZZARDS | Liming Food

- Today, my brother Isho aka Fish, shows us how to cook Stewed Gizzards the way he does it when liming with friends. It's stewed with brown sugar and heavily seasoned with Caribbean green seasoning, ketchup, oyster sauce and soy sauce. This is one you have to try for sure!
INGREDIENTS:
-6 lbs of gizzards, cleaned, cut up and washed
-2-3 teaspoons of salt (your preference)
-2 teaspoons of soy sauce
-1 tablespoon of Thai sweet chili sauce
-1 tablespoon oyster sauce
-3/4 cup of ketchup
-2-3 tablespoons of oil
-3 tablespoons of brown sugar
-1 onion, sliced
-4-6 pimento peppers, sliced
-hot peppers sliced
-10 cloves of garlic, sliced

I would fry up the gizzard with a little oil and salt in the pressure pot and pressure it until tender and then fry it up with sauces and seasonings. Nice video.

I'm probably the only person in my family that likes liver. Looks good. Alot of good flavors.
I suspect he likes the ketchup because it may have tomato paste(which is concentrated for more flavor), which explains the less sweet flavor. Good stuff and good food.
Also, and I come from a trini family myself, Americans use buttermilk to kill off that odor and gaminess. So it's interesting to see the differences in how different cooks manage that.
Also, I know I'm going on and on, but you remind me so much of my great grandma. She looked and talked just you. It's uncanny. She was from Tobago.

This Bai, needs to get marry into my family! Never had that, but I believe they cook this in Guyana on the morning of the wedding when you butchered a Cow or any other animals. FISH ,you are a true old fashioned Trini. All our parents use to cook and still cook with out measuring ingredients. My sons hate when I'm cooking without measuring. Fish I cook like you all the time. There's always a Trini line by me in the UK. Love you Fish. Keep on cooking say Hi to Batman for me. Irish Cream.
Ah, you see! I never could get my sugar to melt properly (before it wants to burn) but now I see I've had the heat too high in the beginning. Fish can really cook - he uses a PROPER amount of green seasoning lol! I LOVE your videos! I subscribed yesterday (the Point Fortin video was great even though it made me cry a bit; I miss home).
And never turn yur back on the SUGAR while it caramelized
Stewing is very tricky . Keep an eye on the sugar until it bubbles.

Soy sauce and oyster sauce adds that umami flavor. It may not be traditional but it makes the food taste better and you need to add much salt after

So how did Fish lose the weight? I made this today and it was fantastic. I agree with him on several things: the smell of the seasonings helped me to add some ketchup and soy sauce.

Hi love to watch you and your family cook. I make my stew with some different sauces also and we call it black stew cause of the color. The way some people make it is just with tomato paste or tomato sauce
