Cleanliness and sanitary-ness of the surfaces of the containers that will be in direct contact with the food items are obviously important to protect the health of the people who will consume the food. Does anyone who works in the food industry know if these types of containers are always cleaned and sanitized at the factories that fill the food items into the containers? My guess is that they are not, however, I might be wrong. If they are not always cleaned and sanitized at the food-filling factories, then the containers need to be clean and sanitary when they leave the factory that makes the containers, and they must be kept clean and sanitary throughout the process of delivering them to the filling plants. I see that the plastic film from which these food containers are made comes into contact with many surfaces during the process, for example, the red horizontal surface and white machine framework below the new roll of film that the worker is putting in place at 00:36, the thermal forming dies, the cutting dies, various sliding surfaces, many rollers throughout the process, the dirty-looking rope with the yellow tip that is dragging across the outside of the containers at 05:09 * , and etc. * That oily-looking rope with the yellow tip contacts and therefore can contaminate the outside of the containers. Later the containers are stacked, setting the stage for transfer of contaminants from the outside surface of one container to the inside surface of the nested container. There are many sources of contamination in factories, such as floor dirt, machine lubricants, aerosolized mists of compressor oil and condensate moisture that are exhausted from compressed-air-actuated cylinders, particles dropping from overhead surfaces such as lights and ceiling beams, people's hands, etc. To avoid transfer of dirt to the food-contacting surfaces of the containers, all of the factory surfaces that can reasonably be expected to come into contact with the food-contacting surfaces of the containers, or be a source of contamination such as overhead equipment, themselves need to be kept clean and sanitary. I would be interested in knowing more about how that challenging task is reliably accomplished. The safest policy is to never assume anything.
