Carcassonne is stunning. You would not be disappointed. Perhaps it didn't make the list because it is a city more than a castle but then le Mont St. Michel isn't a castle either
#8 looks like the secret little gem of the lot... I sure would love to check that out. It is the perfect balance of looking like a medieval fortress on the outside but could be amazing on the inside.... and the views~! Wow.... much more manageable size too.
Great list, although these are all "modern" castles (many would say they are more palace than castle). I'm personally more into the Medieval castles built using more rudimentary techniques were the focus was on siege defense and not luxury living.
France built a new medieval castle with techniques and tools of the middle age, the Château de Guédelon. It will be the most "pure" medieval castle when it will be completed.

Fontainebleau would NOT make my list - more of a palace than a chateau and aesthetically a hodge-podge of different styles reflecting its evolution down the centuries - Surprised you left Azay le Rideau off your list, one of the loveliest Loire chateaux - a real gem of a moated Renaissance chateau - Chantilly is pretty superb as well... A factual point - Leonardo was responsible for the design of the double revolution staircase which makes up the central feature of Chambord and not the chateau itself - There were many architects who were involved in the way that Chambord developed, all of whom were supervised by the king, François 1er - So in a way he was the architect - François' reign coincided with that of Henry VIII - Henry was just a couple of years older (I think) - But François only spent a total of 55 days in Chambord and while it's spectacular it is not conducive to comfortable living in the way that the others on your list are - especially the 1st, Chenonceau, which is absolutely gorgeous ...
