I watched 3 videos yesterday on the Chubby 3400, the 4th video being this one... I was then convinced & I ordered it!! Let the smokin begin!
I’m still questioning wet vs dry smokers in my search , those ribs don’t have much bark on them those water pans just keep the smoker too humid and cool I think
Very nice. Just got a Chubby 3400 two days ago. Did a brisket (my first one I’ve ever cooked) on it and it turned out absolutely amazing. Doing some baby backs today.
ken w at first no. My second and third cooks on it were not good. I’ve found that it was mostly my error, but I’ve fine tuned it a bit and it’s getting better. Sometimes it runs a bit hotter than I want it and I use a bbq guru. Gotta really watch the water pan as it will cause temps to spike if it’s low. Also for some reason I feel this smoker burns fuel faster than it’s supposed to.
Backwoods Smokers have been a great staple for the BBQ industry for many years. Its awesome to see a unit for backyard use. Another great video!

Backwoods Smokers, are the top of the line smokers. I own this chubby model and it really holds a steady heat and produce top quality smoked food.You need to rotate the ribs about two hours into your cooking as the top get a little more heat than the middle or bottom.This Chubby smoker is the real deal.I do not use foil as the water pan keeps everything moist but splitting hair I guess. Nice job as always, Greg! I am impressed by the Chubby 3400. Perhaps you could do a cold smoke demo with it (with salmon).. It is almost impossible to find goo cold smoking vids with the kind of quality and care that you put in on your productions.

I'm digging the smoker man but more importantly, those ribs are looking spot on. I bought some baby backs to smoke this weekend. I usually do the 3-2-1 for the most part but I think I'm gonna try not wrapping in foil this time any suggestions?

Having not seen it in person, was hoping you could answer a question: do you think you could fit a packer brisket on one of those racks? Their website says yes, but 16.5" x 15.5" seems on the small side. Cheers!

That is a very interesting smoker Greg, I've never seen a "reverse flow" in these types of smokers. Ribs looked great!

I'm curious about temp control. If for example, I wanted to smoke at 225? Would I take it to that temp then close down the vent some to get it to stop rising? Also, I've heard some complaints that the Chubby is a pain to clean. Would you agree?

Thank you, great video. I have a treager and a Fast Eddies Smoker (pellet obviously) I've been poking around for a "live fire" smoker and believe that your video may have me sold. The last big cook I did was 330 lb of brisket, pork butts and chicken but at home this would be the ticket. Do you happen to know the "run time" of a single load of charcoal? At any rate, as usual great work, this was fun to watch.

So what are your overall thoughts of the Backwoods Chubby Smoker? I’m considering either a G2 Chubby or a Shirley Fab or possibly a custom Yoder.

I'm really trying to decide on the 3400 and the G2 Chubby. You cant season stainless walls in the 3400 and that is why I am considering the G2 Chubby.

How’s this smoker after a year ? I need a small smoker like this for brisket. Usually only make 1 at a time. 12-14 lbs. would this handle it ?
I think my favorite part of these rib videos is when he admires his "nice bite" after that first taste. It's funny as hell! But- great vids man. Now I'm shopping for one of those smokers.

Looked like that new smoker did its the thing the way those ribs turned out. I like to do a light glaze at the end, also, because it just adds another layer of flavor.

LOVE your videos Greg....especially when you "smoke" versus grill although your burgers are the most impressive I've ever seen. I have a PBC, Yoder YS640 pellet cooker and a PK Classic Grill as well as a Cowboy Cauldron firepit/grill along with a gas grill built in an island....I'm not as bad as you yet....hahaha. I want to get a Gator Pit offset stick burner next which leads me to my question for you....if you could only use ONE of your smokers for the rest of your life....which would you choose? I am guessing your Gator Pit stick burner! :)

Great post, thinkin of gettin' one for one of my kids for Fathers day. Hey, I know you mentioned, do you ever add acid to the water pan, vinegar, wine, apple,oranges, lemon? Thanks.
Not to the pan, but I like adding a little apple vinegar to my apple juice when I spritz ribs.
Roger that, and thank-you for the reply. I've Que'n for the last 40 years, and have a great marinade for a skirt steak (I think you have something similar). Plop the meat or chicken on the grill, crack-open a beer and try not to over cook. NOW, I need to pay attention to heat distribution, combo grill/smoking etc. You, Russ from Smokey Ribs BBQ, and now CJ, MeatHead, CastIronSkillet, BIG LEW BBQ and about 20 others have inspired me. Tryin to show my kids, and their family(s) of about 40+, that paying attention to heat, temp and time are tantamount to good grillin/smokin. Following your post has really up'd my game, thanks! GB

Yes. Now, not bubbling caramelized. More light tightened up.

You know, this was my first cook on this system... That's why. You're right though, I didn't need to and I won't next time.
What is the BBQ community opinion about rubs and sauces together? I was under the impression it was one or the other but I don't really know.
That is a touchy situation there. Some think it is sacrilege. Others are ok with it and it is very commonly done on the comp. circuit. I just go with what my family and I enjoy and don't worry about what others think. There are way too many opinions of what is the correct way of BBQ.
I WANT THIS SMOKER! A Challenge for you... Rendezvous loin back clone. Do you use the water pan with mopping ingredients or remove the water pan and deflector plate to mop over charcoal at the recommended height above the coals? I wonder if the reverse flow design would alter the cooking process either way? Hmmm??? 🤔

Have tou tried boiling the ribs in beer prior to putting them in a cooker with bbq sauce? they are out of this world 😍

Not bad at all. I actually cleaned the racks and water pan in my dishwasher. Every thing else just got wiped down.

The Backwoods Smokers are one of the best cabinet smokers on the market. Pricey though but this one runs about $700. Not bad! Those ribs look delish!

Meat looks good. You said "first use". The chubby looked like it had not been fired to burn the factory oil off. Am I wrong?
Correct. I cleaned the racks and water pan with soap and water prior to the cook per the instructions. I also gave the inner walls a quick cleaning.

I just got my first charcoal grill and for the life of my I cannot get my weber kettle too maintain anything below 300.
Anyone have any advice?
Smaller amount of charcoal lit and really close down lower damper

Put about 20 pieces of Kingsford Blue in a charcoal chimney and let them burn until they are white. Pour the lit charcoal over about 45 pieces of unlit Kingsford blue. Close bottom damper at least half way and leave too damper open a pencil width. This should run at 225-250 for a couple of hours.

It seems to me that putting the coals and the tray would be difficult, the rack does not pull out 3/4 of the way and it is not supported by anything, so you have to put all the coals in lit and then slid it and drop it in place. I know that Backwood makes and nice smoker.
It really wasn't that difficult. During the cook I was able to pull the shelf out more than half way to check the coals (gloved of course). I could have easily added more if needed. Thanks for the comment Jim.
