I own the perfect Grade version.. .The Problem With It is the articulation its so stiff that it cant make much posing let alone hold the main Samurai Sword With both hands.... The Real Grades can do more action poses than the Perfect Ones
Depending in the grade. The grade of the Gundam in the video was HG and was easy and straightforward. Constructing a Gundam (Gunpla) requires something called "nippers" although you can also get sanding tools and a small and sharp modeling knife to help with perfecting the process. Constructing a good Gundam simply requires patience and awareness so it isn't hard whatsoever if you have that under the belt. It isn't as fast and easy as the video shows as inbetween each cut there is the whole cutting out and sanding down part but that's easy if you have patience. Also cutting out pieces is straight forward as you simply grab the nippers and cut out the piece out of it's runner (sheet that holds the pieces) by the little thin pieces holding in the piece (there are usually 2-4 of these little plastic pieces holding the part of the gundam). I suggest building a HG to start off then going on to a MG or RG after 5-10 HGs. Be aware and have patience while building and it'll turn out great. So building a Gunpla/Gundam isn't hard if you've got steady hands, a patient mind, and awareness of the kit and instructions.
No, the sengoku astray is from build fighters. This one is just called the astray (or astray red frame), it’s from gundam seed (the worst thing gundam related except for some of the mobile suit designs in my opinion).

About how long would it take a first time to assemble an average Gundam.
Probably 1 - 3 hours
I put mine together in about 30 minutes high grade scale 144 rx782
Gundam so hard to build last time i make 3 hour and tommorow again im build again until 1 hour
Which grade? SD & HG are much easier to build
