Just to have a better understanding Mayan civilization had highly educated society including scientists, agriculturalists, artists and teachers which were erased and destroyed by the invasion of the Europeans.

I'm a descent of Mayan people and they were so advance like the calendar was created by them .numeric system .irrigation and many things that my people are not talked about or recognized for that brought so much to even todays.we are one with nature and universe

The reason the food tasted "gritty," as you put it, was because you were eating some of the stone it was ground on. Ancient civilizations that used that method of grinding grains had an issue with tooth wear caused by bits of grit from the stones getting in the food.
