    New Zealander here to explain the “oki doki” as best I can. It’s inspired by hokey pokey ice cream - vanilla swirled through with honeycomb candy. I’ve literally never heard honeycomb/hokeypokey described as sponge textured but now that I think of it, yeah it’s a sharp sponge texture… bone apple tea!

      I believe it’s called a “sponge candy” because the texture inside is similar in looks to that of a sponge. Or it could be that it’s a form of caramel that has baking soda whisked in to make it fluffy.

    thank you kristin for acknowledging that vanilla is a really interesting and complex flavor, when you use actual vanilla and utilize it properly. i love vanilla. and yes, i'm boring, but vanilla isn't.

      Good vanilla ice cream is very good, my store stopped selling the one I bought, though (I think the brand was Coolhaus).

      Our local ice cream place who make their own icecream have had 3 plain vanillas since opening with each having a different vanilla used. I was so confused the first time I saw them "wasting" three slots for vanilla but then I learned better. Watching this made me want to go get one of their vanillas.

    Gotta say when I hear the phrase "hazards of the job", I never imagine getting a brick of ice cream slammed down on one's finger, but here we are. 😅 Great video and the Okie Doki ice cream sounds really good.

    The lemon ice cream is sooooo good though! It reminds me of a dessert my mom makes called Lemon Lush, with lemon pudding, cream cheese, cool whip, & shortbread crust. 🤤🤤

      Crust:
      2 cups all-purpose flour
      1 cup butter, softened
      1 cup chopped pecans
      Cream Cheese Filling:
      2 (8 ounce) packages cream cheese, softened
      2 cups powdered sugar
      2 Tablespoon lemon juice
      Pudding Layer:
      2 (3.4 ounce packages) instant lemon pudding
      3 cups milk
      Whipped Cream:
      1 1/2 cups heavy cream
      1/2 cup powdered sugar

      INSTRUCTIONS
      Preheat oven to 350 degrees.
      For the crust: In a food processor, pulse the flour and butter together until a dough forms. Add the pecans and mix until combined. If you don't have a good processor you can cut the butter into the flour using a pastry cutter or 2 forks and add the pecans after the butter is cut in.
      Press the mixture into bottom of a 9x13 baking dish. Bake for 20-25 minutes or until lightly golden brown. Let crust cool. While the crust is baking prepare the remaining layers.
      For the Cream Cheese Layer: In a medium bowl, beat the cream cheese, powdered sugar, and lemon juice together until smooth. Spread evenly over the cooled crust.
      For the Pudding layer: In a separate bowl, mix the lemon pudding and milk together and beat for 3 to 5 minutes. Let the mixture set up slightly in the refrigerator if it's not thick yet. Once it has set up a little spread it over the cream cheese layer.
      For the Whipped Cream: Beat the heavy cream and powdered sugar until soft peaks form... (Or use cool whip for easiness)
      Spread over pudding mixture.
      Chill dessert for at least 3 hours until ready to serve
      *some do a no-bake version & just use golden oreos for the crust. Nuts can also be eliminated for allergy reasons. Enjoy! 😊

      It never tastes quite right for me. Like, it taste like when chocolate has gone a bit bad and grey. Not inedible but not great.
      Ben and Jerry's are the only exception to the rule. Phish Food is amazing x

      Chocolate icecream, like vanilla, has to be made right. The generic ones don't do it justice. But the one's that are made properly taste delicious

      My supermarket used to have a non-dairy thai tea boba ice cream and it was so good! I'm sad that they stopped stocking it

    In case nobody's mentioned it in the comments yet, Speculoos is a type of biscuit made in Belgium. It was made as an alternative to the Dutch Speculaas. In both countries it's quite popular. There's not only ice cream but also a sort of 'peanut butter spread' and other stuff made from Speculoos and/or Speculaas. ^^

      Came here to say this! Also, speculoos (the Belgian, less spicy version of Dutch speculaas) is now branded in the US as Biscoff. Fun fact: the Latin word speculum (which means mirror) is actually where the name speculaas/speculoos comes from because traditionally the biscuits are shaped in moulds (that look like windmills, animals, people etc.) so the biscuits are a mirror image of the mould.

      Honestly I don’t like unnecessary fake food dyes so I don’t like bright green mint ice cream. I would be good with like a pale pale green though.

      Isn't speculoos the spread and speculaas the cookie? I'm german living with my dutch partner in the netherlands for 2 years now and people always correct me about it because I switch it up all the time 😅

    We have a candy called Sponge Candy here in Buffalo/Western NY. I guess it’s best described as, like, a honeycomb toffee, but we cover it in chocolate and cut it into squares. It’s extremely popular!

      In Canada you can buy that as a mass produced chocolate bar available wherever big brand chocolate bars are sold. They're called Crunchie bars. I believe they're by Cadbury. They're really good.

    As an upstate NYer, we also make sponge candy - weirdly, you need a certain climate to do it. It's like a honeycomb-sugar-candy, which is generally chocolate coated. I can send you some from a local chocolate-maker if you'd like!

    As someone allergic to milk protein, I super appreciate that the non-dairy options are often initially focused on the basics, because SO many vegan options are very much not like ice cream in texture, if not downright terrible. So just finding a decent brand of non-dairy ice cream in plain ol vanilla I can add my own fun to is a dang miracle. I hope your tummies weren't too angry after this!

      It’s out of season now. But hopefully it’ll come back next year. If you like banana try the next new seasonal ice cream the Banana Pudding ice cream. Super good. Tastes like banana cream pie in an ice cream. It just came so there should be some in stores.

    I don't usually like chocolate ice cream, but I really like the coconut milk chocolate ice cream (especially in the form of the mini ice cream cones). And the Cherry Dark Chocolate Chip Soy Ice cream is one of my favorite ice creams of all time!

    I'm just here to validate Jen's liking of chocolate ice cream. Not everything has to be in the obvious 'salt fat acid heat' diagram.
    Its just nice AND THAT IS GOOD! I don't want my ice cream to be challenging. I don't want to think about the balance. I want nice ice cream. Which chocolate ice cream usually is.
    I have strong feelings about this apparently.
    If you insist, which no one did, chocolate is slightly acidic from the price of harvesting the beans. Salt is in the ice cream. Fat is in the cream. Heat? Tricky one. Heat meaning temperature is not useful here. But meaning spice? Sure chili in chocolate is tasty! But it isn't required.
    If vanilla is good, why can't chocolate be good as well?
    Like i said, strong feelings. 😁

      I’ve had strong feeling about the salt, fat, acid, heat thing since I first hear about it. I don’t even think every DISH (savory dish, that is) needs all those things. Bringing desserts into the conversations is so weird.

      Kinda late but chocolate does have heat! All chocolate is roasted which develops the flavour present in the cocoa beans from fermentation. It’s one of the most important steps in the development of chocolate flavour.

    Y'all are so funny & awesome, Brie absolutely included! And fyi, your videos really help me when my anxiety gets high by making me laugh & forget my problems for a bit. So tysm for that. I know you've branched off a bit into trying Aldi things, & fun fact they're actually related to TJs, but I think it might be a complicated relationship. Anyhooo, I'm not sure if you have Lidl grocery stores there? I feel like you have to, if my little country section of the US does lol, but maybe you could try some of their stuff? Sadly, 😭 we don't have a TJs close enough to do regular shopping, but I'm definitely Lidl>Aldi. Just a thought!? Wishing you all a very happy pride too!!🌈 🤗 🥳💞

    Spekulatius or Speculoos cookies taste pretty much like a pumpkin spice latte imo. But the "like being kissed by Christmas" description fits pretty well since they are generally sold around Christmas in Germany haha

    Sponge candy is also a thing in the US but it's very regional. My region enjoys it greatly. The center is almost like what I'd imagine the texture of freeze-dried caramel would be? It's airy and crunchy and a tidge sticky, but fantastic. Then that's coated in chocolate! It's a fav of mine

    Okay, but the pumpkin ice cream Trader Joe's has during fall is THE best ice cream to exist (besides maybe Love Potion from Baskins Robbins, only during Valentine's) and I will stand by that.

    Sponge candy is also called honeycomb candy. Essentially, it is what happens when one adds baking soda to hot caramel. Foam forms, and when poured out and allowed to cool, it makes a crunchy, hard foam. I guess that is why they called it “sponge candy.”

    Actually we have milk tea ice-cream with tapioca pearls in the Philippines and dude it's so good, I don't know if they sell it in america but I would most definitely love for you guys to try it! It's called Selecta Supreme wintermelon cream cheese milk tea ice cream, Selecta has different kinds of ice cream so there's alot of choice to choose from💙

It’s basically just sugar and butter and baking soda I think? cooked to a fun melt in your mouth sponge consistency and then covered in chocolate. It’s so yummy! Very satisfying combo of textures

    It's crazy that after all the tj taste tests they've had, they don't know what tj's darling flavor speculoos is. It was a huge trend a few years ago and tj's put it in EVERYTHING. PS - i'm bummed your store didn't have the dairy free chocolate w/cherry, that one is very good!

    Speculoos is something we eat throughout the year here in Belgium, it’s a cookie that’s mostly used with our holiday “Sint-Nicholas“ what is kinda like Santa m, but different hahah (I think it’s great and we have a paste in Belgium for on bread which is great)

    I absolutely love ice cream unfortunately it usually doesn't love me. I actually make homemade ice cream a lot. My most recent experiment was chocolate cherry ice cream. It was really good but I'll have to put the cherries in differently next time because unfortunately the blender almost completely obliterated the cherries.

    Whenever i see icecreams, I'm reminded of the day when i had to go the doctor since i hogged chilled icecreams during the rainy season and got bad cough. The doc after checking my breathing, gave me TWO injections on both my bums. I kept rubbing my bums till I reached home though i was driving my bike. After reaching home, my aunty asked me what flavour icecreams the doctor gave me. When i didn't reply, she said that i got butterscotch on one bum and chocolate fudge on the other bum. She told me that she's happy that i got painful injections so that I'll remember it whenever i see icecreams during cold seasons.

    Sponge candy is a Western NY candy, it’s a toffee enrobed in chocolate. The main difference between honeycomb and sponge candy are the bubble sizes.. in the sponge candy they tend to be smaller. I’m a bit surprised none of the ice cream makers around here have thought to try to put it in ice cream

    Speculoos are cookies that have those flavors. Remember for the mint ice cream, if it was green, it would mean they had used artificial coloring. Sponge candy is wonderful, crunchy with air bubbles and coated in chocolate.

    Sponge candy isn't strictly a new Zealand thing. It's really popular here in Pennsylvania. It's like a toffee filled with air bubbles so it has a sponge consistency, and crunch like floral foam.

    I LOVE the lemon ice cream. Get some of that lemon curd with the ice cream…it’s sooo good. I buy it 2 pints at a time 😂
