Delicious Taco Indiana Recipe 🌮 | Fusion Delight with Rajma Filling

INGREDIENTS FOR RAJMA FILLING:
Rajma ½ cup
Oil 1 tbsp
Chopped garlic 2 tsp
Chopped onion ½ cup
Chopped coriander stalks 1 tbsp
Chopped tomatoes ½ cup
Mixed herbs ½ tsp
Red chili powder 1 tsp
Cumin seeds powder 1 tsp
Salt to taste
INGREDIENTS FOR LACHCHA PARATHA:
Refined flour 1 cup
Wheat flour 1 cup
Salt ½ tsp
Sugar 1 tsp
Oil 1 tbsp
INGREDIANTS FOR HOT SAUCE:
Dry red chillies 5-6 (soaked in hot water for 10-15 minutes and deseeded)
Garlic 4 - 5 cloves
Cumin seeds 1 tsp
Lemon juice 1 tbsp
Olive oil 2 tsp
Chopped coriander leaves 1 tbsp
Salt to taste
OTHER INGREDIENTS:
Mayonnaise
Tomato ketchup
Grated cheese
Sliced onion
Shredded bellpepers
Chopped coriander leaves
Garlic butter
Mixed herbs
Chilli flakes
METHOD:
1) Wash and soak rajma in 1 cup of water for 6 -7 hours.
2) Drain the soaked rajma and add 1 cup of fresh water in it. Cook rajma in cooker till they turn a little over cooked.
3) To prepare the lachcha paratha, Combine refined flour, wheat flour, salt, sugar and oil. Bind it in to a medium tight dough using required quantity of water/ milk. Knead it very well and keep covered for 10 minutes.
4) To prepare hot sauce, combine all the ingredients for hot sauce and grind it in to a fine paste adding the required quantity of water.
5) To prepare rajma filling, heat oil, add chopped garlic, chopped onion, and coriander stalks, add mixed herbs. Sauté till they turn little soft. Now add chopped tomatoes red chili powder, cumin seeds powder and salt. Sauté till tomatoes turn soft and mushy. If required add some water. Now add cooked rajma and slightly mash them. Cook rajma till mixture turns thick.
6) Divide this dough in to 4-5 equal portions. Take one portion and roll it in to a roti. Apply 2 tsp ghee on the roti, sprinkle some dry flour on it. Give a cut from the center of the roti to the edges of the roti. Now roll the roti from the cut edge to prepare the cone. Now hold this cone and press it downward. Again roll it with gentle pressure and prepare a thick paratha.
7) Roast this paratha on griddle on medium flame till it turns little golden from both sides. Prepare all the parathas same way. Keep them rapped in a napkin till the use.
8) Prepare some garlic butter with 1 tsp chopped garlic and salted butter.
9) To assemble the taco, take one lachha paratha, put 1 tsp mayonnaise, 1 tsp tomato ketchup and 1 tsp hot sauce on it. Spread it all over the paratha. Now place 3-4 tbsp of rajma feeling on it and spread it on the half portion of the paratha. Place some sliced onion, shredded capsicum, chopped coriander and grated cheese on it. Fold the paratha in half moon shape.
10) Roast the stuffed paratha with butter on non-stick pan till become crispy and golden in colour.
