I adore egg rolls and have been making homemade for over 40 years! The only problem is that I could make 50 a day and with my ( now grown ) kids, they will all be gone by days end! We love ours with a slap of hot Chinese mustard on each bite and lots of soy sauce!
Not nearly as good as grandma's but the cooking experience was really enlightening. Yea that last ingredient could be one of those mysterious things like on kung fu panda.

Rice noodles make it more soggy. Glass noodles are absorbed water
