Let’s take a tasty trip back to 1986-the year I was born! 🎉
In this special edition What’s For Dinner? video, I’m sharing 3 iconic recipes from the late 80’s: Shrimp Pasta Primavera, Crockpot Chicken Divan and Spinach Artichoke Dip🍴✨ My birthday is coming up, so I thought it would be fun to revisit these classics!
The honorable mentions were Quiche Lorraine, Taco Salad, and the beloved Seven-Layer Dip. Did you know microwave cooking boomed in the late 80’s? Or that sun-dried tomatoes were all the rage? 🤯 Oh, and fun fact: the 80s gave us Fruit Roll-Ups! 🍓🍬
What dish takes you back to your childhood? I grew up obsessed with my mom’s scalloped potatoes-she made them for every holiday (and some random Tuesdays) and they were always chef’s kiss, perfect. 👩🍳💖

*Recipes:*
Shrimp Pasta Primavera
Ingredients:
8 oz favorite pasta (I used chickpea)
1 tablespoons avocado oil
2 tbsp butter
4-6 cloves garlic, minced
3 cups frozen mixed vegetable blend (I used a primavera mix that had red onion, zucchini, yellow squash, red bell pepper and broccoli)
8oz shrimp, peeled and deveined, tail off
Zest & Juice of half a lemon
1/4 cup pasta cooking water + 1 tbsp better than bouillon Italian herb base (or vegetable broth)
2 tsp zesty Italian seasoning (or favorite seasoning)
Optional: red pepper flakes to taste
1/4 cup shredded Parmesan cheese
Instructions:
In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/4 cup of the pasta water and drain the rest. Set aside.
Heat the avocado oil and butter in a large skillet over medium heat. Add the minced garlic and sauté for 2-3 minutes until fragrant.
Add the frozen vegetable blend and cook for about 5-7 minutes, stirring occasionally, until the vegetables are tender but still crisp.
Add in shrimp, lemon zest, lemon juice and seasonings. Add the reserved pasta water with the soup base (or vegetable broth) and stir the vegetables, letting the liquid help deglaze the pan and create a light sauce.
Toss the cooked pasta with the sautéed vegetables in the skillet. Stir in the Parmesan cheese and adjust seasonings based on taste.
Crockpot Chicken Divan
Ingredients:
4 chicken breasts
½ cup mayonnaise
½ cup sour cream
1 can (10.5 oz) cream of mushroom soup
1 teaspoon Dijon mustard
Zest & Juice of half a lemon
4 cloves garlic, minced
2 tsp favorite seasoning blend, I used Kinder’s Cowboy Butter
Salt & Pepper
1 cup shredded cheese, I used Colby jack.
Instructions:
In a medium bowl or mixing cup, combine the mayonnaise, sour cream, cream of mushroom soup, Dijon mustard, lemon zest, lemon juice & minced garlic. Stir until smooth and well combined. Set aside.
Place the chicken breasts at the bottom of your Crockpot. Season with seasoning blend, salt, and pepper. Evenly spread the broccoli florets on top of the chicken. Pour the creamy mixture over the chicken and broccoli.
Cover the Crockpot and cook on low for 5-6 hours or high for 3-4 hours, until the chicken is fully cooked and tender.
About 15 minutes before serving, sprinkle shredded cheddar cheese over the top, allowing it to melt. Once the cheese has melted, shred the chicken, and stir the mixture gently. Serve over rice or pasta.
Spinach Artichoke Dip
1/2 cup softened cream cheese
3/4 cup mayonnaise
1/2 cup sour cream
1 tsp salt
1 tsp Italian seasoning (I used a zesty blend)
2 cloves minced garlic
1 12oz jar of quartered and marinated artichoke hearts, drained
2 cups baby spinach
1 cup shredded mozzarella cheese (plus some for topping)
1/2 cup shredded Italian cheese blend (plus some for topping)
Preheat oven to 350 degrees. Use cooking spray to lightly grease 8x8 baking dish. Coarsely chop spinach and artichoke hearts. Mix all ingredients in bowl. Pour into prepared dish. Sprinkle extra shredded mozzarella on top. Bake 15-20 minutes or until cheese is bubbly and golden brown.
Serve with pita or favorite crackers!

I graduated high school & got married in 1987…. I remember it being huge when chips & salsa became popular in the late 80’s. Every event you went to had it. We still have a crockpot we use from our wedding. 😂. He’s willing to try it because you’ve TRAINED him well.😂
I LOVE chips and salsa so it makes sense it came out around the same time I did. 😂 We had a crockpot from our wedding too still too until a couple years ago. Then I thought it died so I threw it out. Figured out afterwards it was the stupid outlet and not the crockpot! LOL. And you are sooo right about the training. It’s taken almost 20 years but it’s paid off finallyyyy. 🤣

Yay! The Culinary Queen is back with more delicious recipes! 😋😋 All the dishes looked amazing. I’m allergic to shrimp, so I usually make a chicken primavera dish. You can’t beat a quick, easy yummy meal. Thanks Cait! I grew up in the late 50’s and my son was born in 86. You could be my daughter! Maybe we saw you in passing at the Southwick Zoo. lol
My mom was Italian & made the most amazing stuffed peppers, homemade pizza, sausage, peppers & potatoes, stuffed artichokes and many other great things. My most favorite dessert she made was homemade pumpkin bars with a delicious cinnamon cream cheese frosting. She is definitely missed. 😢 Please keep these recipe videos coming. Born 1970 here. Heard of the other 2. Never tried. But I LOVE spinach artichoke dip! Especially my daughter in law's. She uses marinaded artichokes.

In the mid '80's, I was in college when Quiche Lorraine suddenly got popular. It's been around since the 16th century. My husband of more than 30 years made Taco Salad for me on our first date in 1986. It was invented by 'Mr. Frito' in 1955 for his restaurant in Disneyland. I first had Chicken Divan at a posh wedding on Coronado Island in 1988. It's from a New York hotel in the 1930's.

I graduated high school in 1986! Great year. I haven’t had chicken divan in years. In fact, I think it was the first dinner I made my husband when we were dating in the early 90’s. Since you liked chicken divan, I highly recommend Six Sister’s crockpot ritz cracker chicken. I like the topping more crispy so I bake this dish instead of the crockpot and use a little more of the ritz cracker topping.

Hey girl hey, love your hair! Also a member of the crazy hair club. My hair has thinned out as well but I was a solid mix of Diana Ross and Animal the muppet. I also hail from the 1900's, 1978. One of my favorite meals growing up was one my dad made chourico and potatoes and also his caldo verde. I miss both of these dishes, but have learned how to make it on my own!

Cait, I bought a crockpot in 1976 and I still have it and I use it often. It is the best, and the cookbook it came with is so old lol! The pictures are in the orange and green colors.. And Happy Birthday ❤
Oh my goodness, crockpots are the best. They last forever! One time I threw one away because I thought it finally died after like 15 years. I found out a few days later, it was the outlet and I was so sad. 😂
I grew up in the 80s and love pasta primavera! We ate a LOT of pasta back then. No one worried about the carbs. 😏

Born in 79. Never had the quiche. I do know of the bean dip. When I worked at a restaurant taco salad was insanely popular and I hated making them.

I just made Chicken Ala King this week and I also made Pasta primavera, no meat, for meatless Monday! Too funny! I was born in 1953 and my children were 1970 and 1974! However, I do raise my special-needs granddaughter who was born in 1991!

They are! They actually loved the spinach and artichoke dip which I find so funny because I don’t know many toddlers that would even look at that. 😂
I can’t do the “regular” cream of soups. I like that Kroger has an organic option for Cream of soups and I believe Pacifico has a version as well. No MSG. Give it a try.
