Well considering the circuit has been at least partially used in the Tour De France, this did not surprise me at all as to how bicycle tyres would perform to be honest.
The game is only simulating the height center of gravity. F1 with bicycle wheels would start skating a lot and at such a high speed in the corners the car would pass straight, as the amount of friction would be insufficient to change the direction of the amount of mass the car has.
More realistically, I think it would be worse that just having a higher center of gravity and no ground effect like in the video. In fact, the surface of the tyre on the road would be tiny du to the dimension of the tyre. That leads to two problems. First, the pressure in the tires must have been tremendous to support the weight of the car (even more considering the down force generated during the race), and the tires would just have blown up instantly. Secondly, even though the tyre would have been reinforced to support this weight, it would be very difficult to accelerate. Indeed, the forward force being applied on a smaller surface, the sheer strains would have increased beyond the resistance of the rubber very quickly, and at the end you would be skidding from the rear and would have almost no steering. All this damaging even more quickly the tyre.
I like to imagine whoever is making these mods always having a laugh by the time they test the abomination that they have made

worth noting Pirelli actually makes PZero cycling tyres!, and also that bike tyers are designed to behave on angles (like motogp and unlike F1)
