- We discuss if Cow Parsnip is toxic or poisonous. Any substance causing harmful effects whether it is ingested, inhaled or absorbed through the skin is toxic. Here in Jackson Hole, Wyoming, we found some dying Cow Parsnip. At this stage of this plants life it is not toxic.

I highly recommend Samuel Thayer's books Forager's Harvest, Nature's Garden and Incredible Wild Edibles. I forget which book covers cow parsnip but he has a lot of good advice on telling apart edible from toxic members of the carrot family. I have to say your photo does not look like the Cow Parsnip that I am familiar with -- en.wikipedia.org/wiki/Heracleum_maximum . Common names are confusing, maybe I am thinking of another plant. I know garden parsnips have yellow flowers but the species I'm familiar with has white.
Different classifications and variable species. For sure in Different parts of the country. I see you can have white and yellow flower tops. Ty for the recommendations.
