That's actually a misconception as per canon. Wolverines skeleton doesn't merely have an adamantium coating, it has turned into adamantium beta. A form of organic adamantium with the capacity to self heal like bones would. Although retaining all the qualities of true adamantium/ primary adamantium.
Adamantium beta was an imperfect form of Adamantium which was constantly poisoning Wolverine and slowed down his healing dramatically. After magneto rips the metal from his body, Jean Grey used her telekinesis to literally hold him together long enough for his body to heal completely. Once that was done his healing was so weak that it took a few years for it to regain its full capabilities and was actually stronger and faster.
