Perfect Jollof Rice - Oven Baked Nigerian Jollof Rice

- Just showing you how my make my Perfect Oven Baked Jollof Rice.
For this recipe, bear in mind, I used Basmati rice. Other rice type cooking time will vary. Also, if you’re using long grain rice, you’ll need to parboil your rice first to speed up the cooking time. Also, do not skimp on White Pepper and Ginger, they really are important ingredients to help increase the flavor of Jollof rice. Butter is also important as it helps replenish the lost moisture and lushness during the high heat cooking process, especially if you’re working with Basmati rice.
Ingredients:
3 cups Rice
3 Medium Size Red Bell Peppers (Tatashe)
1 can of Plum Tomatoes/ 4 Medium Tomatoes
3 Scotch Bonnet (Ata rodo)
1.5 Cup Beef or Chicken Stock or Water
100g Tomato Paste
2 Onions
150ml Vegetable Oil
2 Tablespoons Butter
2 Inch Root Ginger
1 Tbsp Curry Powder
2 Tbsp seasoning or any seasons of your choosing
1.5 Tbsp White Pepper
1 Tbsp Thyme
Bay Leaves
Salt to taste

UPDATE: Dinner came out perfect. Rice is very spicy though. I def recommend using one scotch bonnet. Had jollof with some peppered Turkey. You can call the heat down for kids by adding milk.
Turned out nice and crisp cooking it in the oven! I would warn people that it can turn out very spicy with the ginger, white pepper and habanero pepper combo. I suggest to reduce the habanero pepper to 1.
We had this for lunch and it was so amazing 🥳 I didn’t have fresh tomatoes for the final 15 minutes so used only onions and butter. Didn’t have bay leaves and white pepper but it still tasted fabulous! I’ve never considered cooking with tomato paste cos it left a bitter aftertaste but this was just so tasty my daughter said, ‘you have to leave a comment!’ I wonder why anyone would give this video a negative review 😯 I prefer this video to others I’ve seen with running commentaries. Amazing recipe. My rice ended up slightly al dente, so I will probably par-boil it as per the note next time. I fixed it by letting the rice stand a bit longer than 15 minutes, and then heating a couple of portions in a wok with a little added water. Was fricken delicious with some fried shrimp.
Frying the tomato paste until it was almost black made such a huge difference to the depth of flavour. Thank you!!

Giving this a try but ran into an issue that I hope will help someone else if they don’t make it to the description box.. Firstly, the 200 degrees mentioned in the video is Celsius.. For Fahrenheit, it's 392 (or 400). Also make sure you're using parboiled rice. I don’t have parboiled rice right now; I'm using regular long grain. I've already wasted 45 mins cooking the rice at 200F instead of 400F, but luckily I still have some chicken I had to bake. I will update my comment on how long the rice took to cook now that the temp has been adjusted. ❤
Edit: My first check on the rice was after about 45mins, then again after an additional 15mins. It has still not cooked to the desired softness but it looks and tastes great. I just put it back in the oven after adding 2 cups of water (I am cooking 3 cups of rice) for 25mins. When I first put it in the oven, I used just enough water as in the video but long grain seems to require more water/stock/broth. I suggest no one tries this recipe with long grain rice. The rice still didn't cook all the way through and became mushy. 🤷♀️

A bit easier but I pile on plenty atleast 3 meat for hardworking husband ooo. I add mix veggie, shrimp/crayfish, chicken, beef n nice smoked turkey or beef sausage, fry in palm oil if I have any and a side of sweet plaintain.

I put my rice in the oven for 200°F and the rice didn’t cook at all and I didn’t get the right consistency. I tried to finish it off in the pot, but by that time it was too late and my rice was all gummy 😢
