Anyways, like I was saying. Shrimp is the fruit of the sea. You can barbecue it, boil it, broil it, bake it, sauté it. There’s um, shrimp kebabs, shrimp creole. Shrimp gumbo, pan fried, deep fried, stir-fried. There’s pineapple shrimp, lemon shrimp, coconut shrimp, pepper shrimp. Shrimp soup, shrimp stew, shrimp salad, shrimp and potatoes, shrimp burger, shrimp sandwich. That’s, that’s about it.
Whole shrimp with the head and shell on sautéed with garlic, lemon, Calabrian chilis and wine until just done then tossed with some fresh parsley and more lemons on the side with fresh beautiful crusty bread to soak up the juices is my favorite way to eat shrimps!

In japan we like to grill shrimps, lobsters, clams and scallops with kewpie mayo. Heated mayo gets buttery and the hint of acid gives a more complex flavour to it
a trick we used at a fried chicken restaraunt I worked at: butterfly the shrimp with tails off, put around 5 tablespoons of buttermilk Hidden Valley ranch into a plastic bag, add 5-10 shrimp and toss to coat; add in 3/4 cup or so of seasoned flour (we used the same as we fried our chicken in- flour with onion powder, garlic powder, salt, pepper, paprika, and parsley flakes) and shake in the bag, ensuring coating; dump into a mesh strainer thats big enough to let the chunks out but not the shrimp, and deep fry; was my favorite way to make shrimp, and my amounts may be off, as it was never really measured and it worked by feel
When I was 19 I went to the Bubba Gump location on the Malacon in Puerto Vallarta, Mexico (I was young and dumb and Canadian. I am no longer young.), and received coconut shrimp with the shells still on underneath the breading. Picking bits of shell out of my mouth still lives in my nightmares.
-That baking soda and salt trick is the best advice here - I stumbled on that a year ago, and have been tossing my shrimp with that before searing in the pan ever since. Makes almost like deep-fried levels of crisp. You can use corn starch instead of baking soda as well if you're adding other flavors, I prefer the baking soda though.
I'm fortunate enough to live near(ish) one of the best places in the world for fresh prawns. Every year around Christmas a handful of Fish shops around the coastal city of Mooloolaba (and some places nearby who also get prawns from there) has massive lines of people waiting to buy fresh or snap frozen prawns caught that same day. It's a tradition in many parts of Australia to have prawns on Christmas.
My recommendation for the Thai curry, you should fry your curry paste in the top layer of coconut cream from the can and then add the rest of the liquid when it gets that nutty aroma. Additionally you can try to use Keffir lime leaves over lime zest for more authenticity. The My Thai Kitchen curry works fine but for more intense flavor I have always preferred Mae Ploy in the small, single serving cans

I've always appreciated the writing for this show, the production value has steadily increased to a comfortable sweet spot, and the cooking technique has improved greatly over the years.
I feel so sad for all the poor unfortunate souls who can't drive down to shrimp boats and buy live shrimp. There is truly a very noticeable difference with shrimp that have never been frozen, especially when frying. I am glad Basics is back!

Here is something offbeat that can be done with shrimp (aka Prawns, which is the UK name for them); Put them on a Hawaiian Pizza, with Ham and Pineapple. And before anyone complains, everyone can have their own tastes. They add a sweetness to the sharpness of the pineapple, and the saltiness of the ham. Try it if you don't believe me...
I have been using the same poaching method for bout 20 years and it has yet to let me down. Instead of a shrimp stock I use whole herbs and spices (clove, star anise, bay, celery seed, coriander seeds, black pepper, thyme and allspice) into water with some citrus and a splash of cider vinegar and vigorously boil for about 10 minutes before adding the shrimp off the heat. For the cocktail sauce I always include one or more citrus juices and zests to it and let it sit overnight so the zests release their oils.

NE FL resident here and I concur - Mayport shrimp are excellent and the way to ensure you're getting extra fresh shrimp if you live locally.
My in-laws live on an island off of Charleston SC and prime shrimp season down there is always amazing.

He lives on the east coast, makes sense to me. Seafood is probably way cheaper than center of the U.S, and most likely of better quality as well.
